Home Time : Swiss Steak with Tomatoes

2lbs               Round Steak
1/3 cup         All purpose flour
1 1/2 tsp      Salt
1/4 tsp         Pepper
3 tbsp          Cooking Oil
 
2                  Medium Onions, sliced or chopped
 
14 oz           Stewed Tomatoes, mashed
1                  Green Pepper, cut in strips
1/4 tsp        Garlic powder
1/2 cup       Apple Juice
4 tsp           Red Wine Vinegar
 
3x1/5oz       Beef Bouillon Cubes
2 1/2 cups   Boiling Water
 
Cut meat into serving size pieces (I never have, I just use the steak as it is!)
 
Mix flour, salt and pepper together. Dip meat into flour mixture, brown in hot oil in frying pan. Put into small roaster
 
Saute oinon until soft, adding more oil if needed. Add to meat (I dont think I have ever done this! I just put the onion in the roaster)
 
Add tomatoes, green pepper, garlic powder, apple juice and vinegar (I have never used the red wine vinegar.. but I do usually add a can of mushroom pieces because we love mushrooms)
 
Dissolve beef cubes in water. Add and stir lightly. Cover. Bake in 350 F oven until tender, about 1 1/2 hours.
 
 
 
** I usually make it the night before and stick the roaster in the fridge so all my hubby has to do is throw it in the oven. We usually eat it with rice. The meat just falls apart. There is not really a sauce perse though, its more the liquid its cooked in and then most of it just gets poured out)**
