2 eggs, slightly beaten
1-10oz can enchilada sauce
1-8oz can tomatoes, cut up
1-8oz can kidney beans, drained
3/4 C crushed corn chips
1/4 C onion, minced
1 1/2 tsp. snipped parsley
1 tsp. salt
1 tsp. chili powder
1 lb. ground beef
1 lb. ground sausage
2/3 C shredded cheese
Combine eggs, 3 tablespoons enchilada sauce, tomatoes and juice, beans, cornchips, onion, parsley, salt, and chili powder. Add crumbled ground beef and sausage. Mix well with hands. Shape into a round loaf and place in cooker. Be sure loaf does not touch edge of cooker. Cover and cook on low heat 8-10 hours. Heat remaiing sauce.Top meat loaf with heated sauce and cheese. Cover and cook until cheese begins to melt.
