Duff’s Halloween Caramel Apples
Halloween is a good chance to show the kids the farmers�?market. When you get your pumpkins and gooseneck squash, pick out your favorite apples. [In Baltimore] we have the Reid Farm. The Reids�?apples are from Gettysburg, PA, and they grow crazy varieties. I’m partial to their Fujis since they have a wide range of flavor, almost like the cinnamon is already in the apple. You could also pick up some Pink Ladies, because they are a good size for the little ones, but unlike crab apples. Whatever you do, keep it seasonal.
Ingredients
12 Fuji apples
1 caramel loaf or 1 package of store-bought caramels
Wooden Popsicle sticks
Toppings of your choosing
Directions
1. Wash apples and skewer each apple with a Popsicle stick so that it is firmly attached. Set aside on baking pan lined with wax paper.
2. Line a separate baking pan with waxed paper and fill with your favorite toppings. Mini marshmallows, peanut butter chips, semisweet chocolate chips, assorted chopped candy bars, sea salt, popcorn �?anything goes!
3. In a large saucepan over low-medium heat, melt the caramel for about 15 minutes. Let cool and find the balance so that the consistency of the caramel is warm enough to stay sticky but cool enough that it does not slide off the apple.
4. Dip apples into the caramel and then roll caramel apple in your favorite topping. Place on prepared baking pan and let cool completely.

Directions Twist off the stems from the apples and push a Popsicle stick down into the core. Put the apples in the fridge while preparing the chocolate; they'll coat better if they're cold. Slowly melt the chocolate in a double boiler over hot water or in a microwave set on high for 2 minutes, stirring halfway through the heating time to smooth it out. Remove from the heat and stir until completely melted and warm, not hot. Dunk each apple into the chocolate, allowing the excess to drip back into the bowl. Roll the apples around in the chocolate, turning with the stick, so it's coated all the way up to the top. Use a spoon to baste any hard to get spots. Put the desired coating in a separate bowl and roll the dipped apple around so it is completely covered. Set the chocolate dipped apples on a cookie sheet lined with wax paper. Refrigerate until the chocolate is set.

I bet if you can find the wrapped chocolates like the caramels and add a little milk or heavy cream when melting...maybe that would be close. I believe it's kraft that makes the carmels, the chocolate one are hard to find however. Good luck

Great apples. But I'm trying to find the recipe for a chocolate covered apple I so fondly remember growing up in Baltimore during the 50's. The coating was soft with bubbles and a buttery top. They would just melt in your mouth. Does anyone out there have that recipe??
