BBQ Herb Mix

A blend for use with beef, lamb, pork or game

Makes about 1 cup

1-1/2 Tbsp basil
1-1/2 Tbsp oregano
2 Tsp ground bay leaf
1/4 cup juniper berries
1/4 cup rosemary
1/4 cup savoury

Process all ingredients in a blender. Package in small jars or shakers.

Dry Spice Rub

1 cup chili powder
1 Tbs. garlic granules
1 tsp. onion powder
1/2 tsp. cumin
1 1/2 tsp. salt
2 Tbs. seasoned salt

In a jar, combine all ingredients well & store in a dry place, covered, until ready to use.

Grapefruit Poultry Rub

1 c Grapefruit juice freshly squeezed
2 T Peanut oil
1 T White pepper
1/4 t Dill weed, ground
1 t Salt
1 T Tarragon vinegar
1 Garlic clove minced
2 T Onion minced
1 oz Chablis wine
1 t * Tabasco sauce

*Optional ingredient Heat the peanut oil & wine on Med. until warm. Stir in the grapefruit juice. Cook for 4-6 minutes on Med. then stir in the remaining ingredients. Allow to cool for 1/2 hour. Take an ice pick or steel skewer and pierce the bird all over. Rub this mixture into the bird. Turn the bird over and pour the remaining mixture into the body cavity if you are using a whole bird or over the pieces if you are using the bird cut into serving pieces.

Apple City Ribs Rub

  • 1/4 cup Brown sugar
  • 4 teaspoons Onion powder
  • 1 teaspoon Cinnamon
  • 1 teaspoon Dry mustard
  • 1 teaspoon Salt
  • 1/2 teaspoon Thyme, dried

    This will cover 1 rack of ribs

    Pepper Herb Grilling Rub

    Ingredients:
    1 tbsp. paprika
    1 tsp. garlic powder
    1 tsp. cayenne pepper
    1/2 tsp. onion powder
    1/2 tsp. assorted freshly ground peppercorns (White, Pink, Green)
    1/2 tsp. dried thyme
    1/2 tsp. dried oregano
    1/2 tsp. salt
    1 tsp. dried lemon zest.

    Combine all the ingredients and place in a tin or jar. This can be
    used to rub on chicken, pork or beef before grilling. It can be
    sprinkled, then rubbed in, or mix some with a little olive oil
    and rub onto the meat. Any grilling technique can be used.
    If you don't have the varied types of peppercorns, you can use
    a good quality black pepper instead

    HOMEMADE TACO SEASONING MIX

     

     

    1 tbsp. chili powder
    2 tsp. onion powder
    1 tsp. each ground cumin, garlic powder, paprika, powdered oregano and sugar
    1/2 tsp. salt

    Mix all ingredients together in a small bowl. Makes 3 tablespoons of seasoning mix, which is equal in strength to a 1/4 ounce package of commercial seasoning mix.

    Emeril's ESSENCE Creole Seasoning (also referred to as Bayou Blast):

    2 1/2 tablespoons paprika
    2 tablespoons salt
    2 tablespoons garlic powder
    1 tablespoon black pepper
    1 tablespoon onion powder
    1 tablespoon cayenne pepper
    1 tablespoon dried oregano
    1 tablespoon dried thyme

    Combine all ingredients thoroughly.

    Yield: 2/3 cup
