Almond-Crusted Peaches
2 tbs. ground almonds or hazelnuts
2 tbs. caster (fine granulated) sugar
4 peaches or nectarines
Orange flavored yogurt, to serve
Combine the groundnuts and sugar in a mixing bowl and set aside. Halve
the fruit and remove the stones.
Preheat an overhead grill. Dip the cut side of the fruit into the nut
and sugar mixture to coat lightly. Arrange the fruit cut-side up on
the grill pan and grill for 3 minutes or until lightly browned.
Use tongs to transfer the fruit carefully to serving dishes and
accompany with the orange yogurt. Serves 4
