PINEAPPLE PUDDING CAKE 1 egg 1/2 cup unsweetened pineapple juice 1 package yellow cake mix 17-1/2 ounce can lemon pudding 8 ounce can crushed pineapple Whipped cream Grease a 2-quart square baking dish and set aside. Using the egg and pineapple juice prepare cake mix according to package directions then pour batter into prepared dish. In a medium bowl stir together pudding and undrained crushed pineapple and pour over batter. Bake at 350 for 50 minutes then cook slightly on wire rack. Serve warm with whipped cream.
