Grilled Chicken livers

1 Box chicken livers
pound bacon
salt and pepper

Cut livers in half and wash. Pat dry. Cut bacon strips in half. Salt and
pepper livers. wrap each liver with bacon,Hold in place with wooden toothpick. This is a messy job but well worth the time and mess. Grill until bacon and liver are done. Dip into BBQ sauce and enjoy.

Bacon-Wrapped Chicken Livers -- 12 oz chicken livers -- 8 slices bacon (partially cooked) -- 1 cup button mushrooms -- Cut bacon in half and wrap chicken livers with it. Thread livers and bacon on to bamboo skewers (pre-soaked in water to prevent burning). Drizzle livers and mushrooms with olive oil and grill over medium-high heat for approximately 8 minutes, turn and cook for another 8 minutes (don't overcook). Brush Buck Creek Hickory barbecue sauce liberally on both sides. You may add cherry tomatoes, slices of bell peppers and pearl onions between pieces of meat. Yields: 4 servings
