FRIED GREEN BEANS 1 pound fresh green beans snapped and cleaned 1/4 pound salt pork 1 medium white onion chopped 2 teaspoons minced garlic 1-teaspoon salt 2 teaspoons freshly ground black pepper 1/4-cup water Fry salt pork in skillet. Remove salt pork after there is at least 2 tablespoons grease in skillet. Fry onions in grease until translucent then add green beans and garlic then cook and stir frequently on medium high heat for about 5 minutes. Turn to simmer and cook 15 minutes longer. Stir occasionally and add water if needed.
