CAJUN CASSEROLE 1 pound fresh hot sausage skinned 2 cans whole tomatoes drained and chopped 1 peeled eggplant chopped 1 large white onion chopped 1 large bell pepper chopped 4 medium zucchini sliced in rings 1 cup grated parmesan cheese Brown sausage in large frying pan then add eggplant, onions, bell peppers, tomatoes and zucchini. Smother down then transfer to greased casserole dish. Sprinkle Parmesan cheese on top and bake for 30 minutes at 350. Season with salt and pepper if desired.
