Creole Meatloaf

1 1/2 lb Lean ground beef
1/2 c Cooked white rice
1/2 c Chopped onion
1/2 c Chopped bell pepper
1 ts Salt
1/2 ts Crushed thyme (to taste)
1 Egg
2 cn Tomato sauce (8 oz size)
1 tb Cooking oil
1/2 c Chopped celery
1 tb Finely chopped parsley

Preheat oven to 350 degrees. In a large bowl mix ground beef, rice, onion, bell pepper, salt, thyme and eggs. Add 1/2 8-oz can tomato sauce. Blend and shape into loaf; place in shallow pan. Bake one hour, pour off fat.

Meanwhile, in a medium saucepan, heat oil and cook sauce over medium heat until tender. Stir in remaining 1 1/2 cans tomato sauce and add parsley. Simmer over low heat while meatloaf is cooking. After pouring off the fat from the meatloaf, top with tomato sauce mixture. Return to oven and cook 10 minutes more.

Delectable Meatloaf

2 1/2 lb Ground round (or 3 lbs)
2 pk Onion soup mix
3 lg Eggs
1 cn Evap milk -- (5 ounces)
1/2 c Quick Cook Dry Cream Wheat
12 oz V-8 juice
1/4 c Ketchup

Mix all but one can of V-8 together. Sape into loaf. bak 350 in Pam sprayed loaf pan 1 hour. Half way through baking smear loaf with ketchup. When loaf is cooked and drained, pierce top with fork and pour second can of V-8 over top allowing to run down and around meat. Let stand 10 minutes before slicing.

Diner Meatloaf

1 1/2 lb Ground beef
1 c Soft bread crumbs
3/4 c Milk
1/2 c Chopped onions
1/2 c Parmesan cheese
1 Egg, slightly beaten
1 1/2 ts Salt
1/4 ts Pepper
1/4 ts Oregano
1 sm Can tomato sauce
3 Slices Mozzarella cheese

Heat oven to 350 degrees.Combine all ingredients except tomato sauce and Mozzarella cheese.Mix lightly.In a 10 x 6" loaf pan, shape loaf.Bake 1 1/2 to 2 hours.Drain excess fat.Pour tomato sauce over loaf during last 1/2 hour of baking time.Place Mozzarella cheese on top.Bake 5 to 10 minutes.Serves 4 to 6.

Diner Special Meatloaf

1 1/3 c Idaho Instant mashed potato flakes, divided
1 lb Ground beef
1 Egg, beaten
3/4 c Milk, divided
1/4 c Catsup tablespoon
1 tb Worcestershire sauce
1 tb Instant minced onion flakes
1 ts Salt, divided
1/4 ts Pepper
1 1/4 c Hot water
2 tb Butter or margarine
1 tb Dried chives
2 sl American cheese, diagonally cut in half

In large bowl combine l/3 cup potato flakes with ground beef, egg, l/4 Cup milk, catsup, Worcestershire sauce, onion, 1/2 teaspoon salt and pepper. In shallow microwave-safe dish shape mixture into a loaf, about 8 inches long. Cover loosely with waxed paper; cook on Medium-High 9 to 12 minutes, turning dish once. Remove loaf to microwave-safe serving plate. Meanwhile in microwave-safe medium bowl combine water, remaining milk, butter, chives and remaining salt; stir in remaining potato flakes. Cook on High 3 to 4 minutes or until bubbling. Stir; let stand 1 minute; stir again Spread potatoes over loaf to cover. Top with cheese. Cook on High 1 to 2 minutes or until cheese is melted.

Makes 4 servings.

Duchess Meatloaf Pie

1 Envelope Onion soup mix
1 1/2 c Water
2 lb Ground beef
Hot Mashed potatoes

Stir soup mix into water in a 2 cup measure.

Measure out 1/2 cup soup and blend into ground beef in a larg bowl; shape mixture into a thick 8-inch round paty in a large frying pan; cut into 6 wedges.

Pour remaining soup over; cover; cook over medium heat 25 minutes, or until done as you like beef.

To serve, sppon hot mashed potatoes into a mound on top of meat; dip gravy from bottom of pan with a sppon and drizzle over.

Dutch Meatloaf

1 1/2 lb Ground neat
1 c Breadcrumbs
8 oz Tomato sauce. w/onions
2 tb Mustard
1 tb Vinegar
1 1/2 ts Salt
1/4 ts Pepper
2 tb Brown sugar
1 Egg

Mix meat, breadcrumbs, 1/2 tomato sauce, egg, salt & pepper. Shape into loaf. Combine remaining ingredients with 1/2 tomato sauce. Pour over meat. Bake at 350 degrees for 75 minutes.

Egg Free, Wheat Free, Milk Free Meatloaf

1 1/2 lb Ground Beef
1/4 c Raw, grated potato up to 1/2 cup
1/4 c Chopped Onion
1/4 c Grated Carrot
3/4 ts -Salt;or less
1 ds -Pepper
1/2 c Broth; up to 1 cup gravy, tomato juice,etc
1 c Chopped Vegetables optional peas, carrots, green beans, celery, green peppers etc

Mix all ingredients. Bake at 350 degrees for 1 hour. You do not have to add the optional vegetables, but it is a good way for children to learn to enjoy them.

Everyday Meatloaf

2 lb Lean Ground Beef
3/4 c Dry Bread Crumbs
2 lg Beaten Eggs
1 c Milk
1/4 c Grated Onion
1/2 ts Sage
1 ts Salt
1/8 ts Pepper

Soak the bread crumbs in the milk. Add the ground beef, eggs, onion and seasonings; mix well. Form the meat mixture into a loaf and place in a loaf pan. Bake in a 350 degrees F oven for 45 to 50 minutes. Catsup or barbecue sauce may be spread over the top of the meat loaf before baking. Bake potatoes at the same time by starting them 15 minutes before meatloaf.

Family Style Meatloaf

1/2 c Skim milk
1 c Fresh bread crumbs
2 ts Vegetable oil
1 md Onion; finely chopped
1 cl Garlic; minced
1/2 c Finely chopped celery
8 oz Fresh mushrooms; finely chopped
1 1/2 lb Lean ground beef
1 lb Ground veal
1/2 lb Ground pork
1 tb Fresh basil; minced
1 tb Fresh parsley; minced
1 ts Salt
1/4 ts Freshly ground black pepper
2 Egg whites; lightly beaten
3/4 c Chili sauce divided

Heat oven to 400 degrees. Spray jelly roll pan r shallow roasting pan with vegetable oil spray. Combine milk and bread crumbs in a small bowl; set aside. Heat oil in large skillet over medium high heat. Saute onion, garlic, and celery, stirring frequently, until softened, about 2 minutes. Add mushrooms and cook, stirring, until mushrooms are soft and liquid has evaaporated, about 3 minutes. Combine the beef, veal and pork in a large bowl. Mix well. Add the mushroom mixture, basil, parsley, salt, pepper, egg whites, 1/4 cup of the chili sauce, and the bread crumb mixture. Mix just until blended. Spread remaining 1/4 cup chili sauce over the top and sides of loaf. Bake in center of oven for 1 hour and 20 minutes, or until an instant-read thermometer registers 170 degrees. Remove from oven and let stand for 10 to 15 minutes. Slice to serve.

Fast Meatloaf Patties

2 lb Ground beef
1/2 c Catsup
1/2 c Diced onions
1/2 c Oat meal
1/2 c Milk
1 Egg
1/2 ts Celery salt
1/2 ts Garlic salt
1 Dash salt & pepper

Mix into patties of desired size (at least 1/2 inch thick). Place two short strips of bacon on top and bake @ 375 degrees for about 25 minutes.

French Meatloaf

1 lb Very lean ground beef
1/4 c Lowfat sweet n spicy french dressing
3/4 oz Wheat germ
1/2 c Finely chopped onions
2 Egg whites
1/8 ts Pepper
Salt to taste

Preheat oven to 350. Combine all ingredients, shape into a loaf and place on a rack in a shallow baking pan. Bake, uncovered, 1 hour.

German Applesauce Meatloaf

Vegetable oil
1 1/2 lb Ultra-lean ground beef
1/2 lb Ground pork
1/2 c Finely diced onion
1 c Applesauce
1 Egg, beaten to blend
1 c Bread crumbs
3 tb Ketchup
2 ts Salt
1/4 ts Black pepper

Lightly oil a 9 X 5 inch loaf pan. In a large bowl, combine beef, pork, onion, applesauce, beaten egg, bread crumbs, ketchup, salt and pepper; mix well. Place mixture in a preheated 350 degree oven 1 1/2 to 2 hours. Let cool 15 minutes. Turn out loaf; slice to serve.

Graceland Oatmeal Meatloaf

2 Green peppers, diced
2 md Onions, diced
2 lg Eggs, lightly beaten
2 lb Ground chuck
1 lb Bulk sausage meat
1/2 t Salt
1/2 t Black pepper
1/2 t Garlic powder
1/4 t Onion powder
1 c Rolled oats
1 1/2 c Hunt's ketchup

Preheat the oven to 375'F. Combine all the ingredients except 1/2 cup of the ketchup in a large mixing bowl. Mix well and shape into a nice, even loaf. Place the loaf in a shallow baking dish and top with the remaining ketchup. Bake for 90 minutes or until well-done.

Greek Meatloaf

1 lb Ground beef chuck
1 lb Ground lamb
2 lg Eggs
1 c Fresh bread crumbs
2 Bunches green onions, minced
4 oz Feta cheese, finely crumbled
1/4 c Minced fresh parsley
1 T Dried mint leaves
2 T Olive oil
1 T Red wine vinegar
2 Garlic cloves, minced
1/2 t Salt
1/4 t Ground black pepper

Preheat oven to 375 degrees. In large bowl, mix all ingredients just until well combined but not overmixed. In 13x9 metal baking pan, shape meat mixture into 9x5 inch loaf. Bake meat loaf 1 hour and 15 minutes. Let stand 10 minutes before slicing.
