Chocolate Yummy Slice


Ingredients

2 X 250g packets super wine biscuits<o:p></o:p>

200g butter<o:p></o:p>

200g dark cooking chocolate<o:p></o:p>

2 eggs<o:p></o:p>

2 teaspoons rum essence (or 2 tablespoons rum or kahlua)<o:p></o:p>

500g raisins<o:p></o:p>

½ cup walnut pieces<o:p></o:p>

Chocolate Icing:<o:p></o:p>

3 cups icing sugar<o:p></o:p>

2 tablespoons cocoa<o:p></o:p>

100g dark cooking chocolate<o:p></o:p>

50g butter<o:p></o:p>

5 tablespoons hot water<o:p></o:p>

Melt the chocolate and butter together and add the icing sugar and cocoa. Add water and blend to a thick icing. <o:p></o:p>

Procedure

Melt the butter and chocolate together (to melt in microwave �?heat for 2 minutes on medium and stir until dissolved). Beat the eggs and add to the chocolate mixture with the rum essence, rum or kahlua. Process the biscuits in a food processor into a rough crumb mixture. Add biscuit crumbs, raisins and chopped walnuts into the chocolate mixture. Combine well and press into the base of a baking paper lined 19cm x 38cm square tin. Refrigerate for one hour. Ice with chocolate icing and refrigerate again. Once set, slice and store in the refrigerator.<o:p></o:p>
