Smoked Fish in Parsley Sauce
Make a large pot of white sauce ( Butter, flour salt, pepper and milk)
Add 1 heaped tablespoon of finely chopped parsley
4 sliced hard-boiled eggs
4 sliced boiled potatos (still a bit firm, not crumbling)
1 onion, diced
2 filets of smoked fish- I like Warehou- not many bones. Skin fillet and chop into chunks.
Stirr in and simmer on low. Serve on toast.
