Mixthe banana, lemon juice and grated rind.
Cut bread into cubes.
Place alternate layers of bread, bananas and jam in a greased casserole.
Beat the egg, milk, sugar and mixed spice and pour it over the pudding.
Dot with butter.
Allow to soak for 15 minutes.
Bake in a moderate oven 180°C (350°F) for 30 minutes.
Serve with a custard or a tasty sauce.
Serves 4.
You can play around with this recipe if you wish to by adding additional ingredients such as chopped dried apricots, sultanas, raisins, currants, etc.
