4 hard-cooked eggs
2 Tablespoons butter
2 Tablespoons flour
Salt and pepper
1 cup milk
4 slices Canadian bacon, lightly broiled
4 slices toast
TO PREPARE:
Crumble egg yolks and set aside; chop whites and set aside.
To make cream sauce, melt butter in saucepan over low heat. Mix in flour, salt and pepper. Gradually add milk, stirring constantly. Continue to cook and stir until mixture is smooth and thick.
Remove from heat.
Add chopped egg whites to cream sauce. Place a slice of Canadian bacon on each slice of toast; top with 1/4 cup creamed mixture.
Sprinkle crumbled egg yolks over top.
