Yule Egg Nog Recipe
8 egg yolks
1 cup sugar
4 cups warmed milk
3/4 cup heavy cream
1/4 cup brandy
1/3 cup rum
Nutmeg, to taste
Beat the egg yolks in a bowl, adding the sugar a little at a time.
Slowly add the warm milk. Return the mixture to a saucepan, continuing to cook until hot. (or approx. 175 degrees)
Pour into a bowl and chill.
Whip the heavy cream until it peaks.
Then fold this into the milk mixture, until well blended.
Put into freezer until it just begins to harden.
Then, add the brandy and rum, stir well, whipping for another 30 seconds.
Top with nutmeg.
1/2 cup fruit juice (pineapple, apple, white cranberry) can be subtituted for alcohol.
