Icebox Cookies
1-1/2 cups brown sugar
1 cup butter, softened
3 eggs
1/2 tsp. salt
2 tsp. vanilla
1/2 tsp. baking powder
2-1/2 cups flour
Cream well, sugar, butter and eggs. Add salt, vanilla, baking powder and flour.
Form into rolls, place in fridge until firm then slice into
1/4" to 1/2" thick slices and place on a greased cookie sheet baking at 375 until brown.
For variety, nuts, candy, fruit or even cocoa can be
added.
These cookies can also be frozen for later use.
