Peach Cookies
4 eggs
1/2 cup Crisco oil
1-1/2 tsp. peach flavoring (or vanilla)
1 cup sugar
3-1/2 cups flour
1-1/2 tsp. baking powder
Mix together eggs, oil, peach flavoring and sugar. Add flour and baking powder.
Dough will be sticky. Pat Crisco on fingers to make it easier to work with dough.
Take small teaspoon of dough and roll into a ball. Make them small, because they will rise. If dough is cracking, roll into ball again. Press down lightly.
Bake at 350 for 8 minutes.
While still warm take a small paring knife and gently
scoop out some of the bottom of cookie.
I only work with one cookie sheet at a time, because they are too hard to work with then the cookie is hard.
But, they soften when you have the icing between the cookie.
Take 2 scooped out cookies and put 2 cookies together with
whipped cream icing, pudding, nut filling, etc.
Dip whole cookie in vermouth, peach brandy, apricot brandy.
Roll in dry peach jello.
You can blush the sides with red sugar if you want to.
Put a plastic peach stem on top. You buy these at a cake decorating store.
These take some time, but they are so beautiful on a cookie tray and good tasting.
They make approximately 4-5 dozen mini peaches.
