Ginger Apple Bread
2 cups all-purpose flour
2 tsp. baking powder
2 tsp. ground ginger
1 tsp. salt
2 large eggs, beaten
1/2 cup light brown sugar
1/2 cup vegetable oil
3 medium tart (granny Smith) apples, peeled and chopped
1/2 cup crushed pecans
Preheat the oven to 350 degrees F. Grease an 8x4-inch loaf pan.
Sift together the flour, baking powder, ginger, and salt; set aside. Combine the remaining ingredients and mix well.
Add the wet ingredients to dry ingredients.
Mix just until blended, but do not over mix or beat the batter. Pour into the prepared pan.
Bake the loaf pan for 60-80 minutes or until a tester inserted in the loaves comes out clean.
Cool on a rack for 10 minutes before removing from the pans.
Notes: You can also use apple pie spice in place of the ginger or 1 tsp cinnamon and 1 tsp. ginger.
