Chicken and Broccoli Casserole
2 (10 oz.) pkgs. frozen broccoli
1 medium-sized chicken, cooked and cubed
8 oz. Velveeta cheese, grated or shredded
1 can cream of chicken soup
1-1/2 cups saltine cracker crumbs
1 stick butter
Cook broccoli according to package directions; DRAIN.
Cook chicken and debone and dice the chicken.
Grate the cheese.
Crush crackers and mix with melted butter.
1st Layer -Place drained broccoli in casserole dish.
2nd Layer- Add a layer of shredded cheese over broccoli
3rd Layer-Layer diced chicken over cheese layer
4th Layer--Add another layer of shredded cheese
5th Layer- Cover with undiluted Cream of Chicken Soup
6th Layer-Top with crushed cracker crumbs mixed with the stick of melted butter.
Cook at 350 for 35 to 40 minutes or until topping is nice and brown.
