1-1/2 lbs. small zucchini
1/2 cup water
1 large onion
6 Tbs. butter, margarine or oil
1 cup grated sharp cheddar cheese
1 tsp. salt
1 tsp. pepper
2 eggs, beaten
2 Tbs. melted butter
1-1/2 cups soft bread cubes
Johnny's Salad Elegance
Scrub zucchini and cook in 1/4 cup water about 4 minutes. Sauté onion in butter.
Cube zucchini and add to onion. Stir in cheese and
seasonings; cool slightly.
Mix vegetables lightly with beaten eggs; spoon into a prepared 1 quart dish. Toss 2 Tbs. melted butter with bread cubes in heated frying pan.
Toast and toss lightly until lightly browned.
Sprinkle generously with Johnny's Salad Elegance.
Scatter over top of zucchini mixture.
Bake at 350 for 30-35 minutes.
