1 cup of sugar
1 Tbsp cinnamon
2/3 cup flour
2 Tbsps powdered sugar
1 tbsp olive oil
2 eggs separated
150mls milk
Oil for deep frying

Mix together the cup of sugar and cinnamon, Set aside on a dinner plate.
Sift the flour then fold in the sugar with a spoon. In the center of the flour mix whisk in the tbsp of oil and egg yolks., then add the milk until the batter is smooth.
Set aside and let it rest for minimum 15 minutes
Whisk egg whites to form stiff peaks and fold this into rested batter. Heat oil then dip bananas either sliced length ways or just sliced. When cooked drain on paper towel and while still warm dip in the cinnamon sugar that you set aside
Serve warm with Ice cream or whipped cream
