Sweet Potato Pound Cake 3 cups cake flour
2 tsp baking powder
1/2 tsp baking soda
1 tsp cinnamon
1/4 to 1/2 tsp nutmeg, to taste
1/4 tsp salt
1 cup unsalted butter, room temp
2 cups sugar
2 cups cooked sweet potatoes or 1 can drained and mashed (16 oz)
1 tsp vanilla
5 large eggs
Preheat oven to 350 F.
Grease and flour 12 cup bundt pan or 2 loaf pans.
Sift together dry ingredients and set aside.
In food processor cream butter and sugar until fluffy.
Add sweet potatoes and vanilla and puree. Add eggs one at a time, pulsing to mix thoroughly after each. Slowly add flour mixture pulsing to combine.
Pour into pan or pans and bake 60-75 min until golden on top and cake tester comes out clean.
Cool in pan on wire rack.
