Apricot Orange Cake
1 cup of dried apricots
1 cup of boiling water
about 8oz of butter
3/4 cup sugar
1 1/2 cups flour
3 eggs
1tsp baking soda
1tsp vanilla essence
Pour the boiling water over apricots then m/w for 5-10 mins on high. Allow to cool for 20mins. In a food processor or electric mixer beat butter and sugar until light and fluffy.
Add the eggs one at a time beating well after each addition.
Stir in the baking soda to the Cooled apricots and its liquid then add to the mixture with the flour.
Mix well.
Pour into a greased cake tin. Bake 350-375degrees Time 45mins
Icing - Frosting
2 cups of icing sugar, Grated rind and squeezed juice of an orange
Tbsp of soft butter
Mix altogether until smooth consistency and spread over the cake letting it drizzle down the sides.
