Gluten and dairy free tuna pasta

 

This recipe uses gluten free pasta, but you could also use regular pasta (ideally wholemeal), or vermicelli noodles, which are also gluten free.

Serves 2 

INGREDIENTS

300 g pasta of your choice
185g can tuna in brine or springwater
1 brown onion, chopped
1 clove garlic, crushed (optional)
2 tsp olive oil
1 425g can crushed tomatoes
1/2 cup orange juice
¼ cup toasted pine nuts or walnuts
1 Tbsp finely grated orange zest
¼ cup fresh dill, chopped
½ tsp cumin
Sea salt and black pepper to taste

Method

Cook the pasta, drain it and set aside.

Cook the onion and garlic in the olive oil for 4-5 minutes, or until they soften. Add the tomatoes and orange juice and simmer for 3 minutes.

Add all the other ingredients except the pasta; stir them through well and cook for one minute.

Place the pasta on individual serving plates and spoon some sauce over each.

Serve with a fresh raw salad.
