Potato Pancakes Hawaii Style

 

Ingredients:


1 1/2 cups pancake mix

3/4 cup Instant Mashed Potatoes (dry)

1/4 tsp. salt (I omit all salt)

1 tbsp. sugar

1 1/2 tsp. baking soda

2 beaten eggs

3 tbsp. canola or sunflower oil

1 1/2 cups buttermilk

1/2 cup milk

1 tsp. vanilla

2 cups diced ham

3/4 cup diced pineapple

Directions:


COMBINE all dry ingredients together well in a large mixing bowl. Add eggs and oil. Mix well.

ADD vanilla, milk, and buttermilk. Whisk until smooth. Add pineapple, Stir until fruit is incorporated.

USING medium heat, fry pancakes with butter in a medium to large fry pan, depending on how big you want the pancakes. Cook approximately 3-4 minutes on each side, or until golden brown.

SERVE plain, with syrup, sprinkle with powdered sugar or top with any of your favorites.

    Bake Time: 45 minutes
            Makes: 6 pancakes
