Coconut-Orange Pie
Ingredients:
1 premade pie crust (your favorite)1 cup sugar1/3 cup cornstarch1-1/2 cups milk3 eggs or yolks 2 Tbsp butter2 Tbsp orange concentrate1 cup coconut, toasted8 oz. cream cheese1/3 cup powdered sugar1 cup whipped cream
Directions:
COMBINE sugar, cornstarch & milk in blender.HEAT on medium setting in saucepan until thickened & bubbly.REMOVE from heat & gradually stir into beaten eggs; return to heat & cook until thick stirring to avoid scorching. REMOVE from heat & add butter, concentrate and coconut; turn into pie shell & chill until set. COMBINE cheese & sugar until well blended.FOLD in whipped cream; spread over filling; chill. SPRINKLE top with toasted coconut. TIP: Keep refrigerated.
