Butterscotch Cake

 

Ingredients:


3 tablespoons butter, melted

2 eggs

2 cups brown sugar

4 cups flour

1 3/4 teaspoon baking powder

1/2 teaspoon salt

1 teaspoon baking soda

2 cups buttermilk, or use sour milk

2 cups pecans, chopped

1/4 cup ground pecans

1/4 cup sugar

1/4 teaspoon nutmeg

1/4 teaspoon cinnamon

Directions:



SIFT flour, baking powder, salt and baking soda.

BEAT eggs in large bowl until frothy. Add brown sugar slowly, beating after each addition. Blend in the melted butter.

ADD dry ingredients to egg mixture alternately with the buttermilk, stirring well after each additon.

STIR in chopped pecans. Put batter into two greased pans.

MIX remaining ingredients and sprinkle over each loaf.

BAKE at 350°F for 40 to 50 minutes.
