Veggie Salad | | Ingredients: 1 large yellow squash OR zucchini, cut in half lengthwise and sliced (about 1 1/2 cups)
1 large green OR red pepper, cut into 1-inch pieces (about 1 1/2 cups)
1 cup Zesty Italian Croutons
1 cup mushrooms cut in quarters (about 3 ounces)
1/2 cup drained marinated sun-dried tomatoes, sliced
3/4 cup walnut halves
1/2 cup prepared Italian salad dressing
| Directions: IN large bowl toss squash, pepper, croutons, mushrooms, tomatoes, walnuts and dressing until evenly coated.
SERVE immediately.
