Directions: Rinse chicken breasts well, remove excess fat. Combine cracker crumbs and parmesan cheese in dipping tray, set aside. Beat egg and oil together, pour into dipping tray. Dip chicken breasts into egg and oil mixture, coating both sides and then into cracker crumb and parmesan cheese mixture. Lay chicken breast into baking pan. Repeat until all chicken breasts are coated. Keep all the chicken breasts snugly together in baking pan. Bake in 375 degree oven for 45 minutes. Remove from oven and sprinkle mozzerella cheese evenly over all and return to oven for 15 minutes at 350 degrees or until mozerella is melted. |
