Pork Roast with a Twist

 

Ingredients:


1 jar (11 oz.) chunky salsa

1 can (11 oz.) Mandarin oranges, drained

2 pork tenderloins (1 lb. each)

1 tsp. olive oil

2 tbsp. chopped fresh cilantro leaves

1 lime, cut into wedges

Directions:


MIX the salsa and oranges in a small bowl.

PLACE the pork in a 13 x 9 x 2-inch baking pan. Rub the pork with the oil. Spoon salsa mixture over the pork.

BAKE at 425°F. for 35 minutes or until cooked through but slightly pink in center.

REMOVE the pork from the pan and let stand for 10 minutes.

SPRINKLE the pork with the cilantro and serve with lime.


   Prep Time: 10 minutes                Cook Time: 35 minutes
   Prep Time: 40 minutes                Serves: 8
