Carrot Salad

 

Ingredients:


3 lb. shredded carrots, or slightly cooked carrots, cut up

1 small -to- medium red onion, cut up

Chopped green onion, for color

1 small yellow or green pepper, cut up

1/2 cup oil (good quality salad oil works best)

3/4 cup vinegar (use good quality red wine vinegar)

1/4-to 1/2-cup sugar

1 can condensed tomato soup

garlic powder

onion powder

dry mustard

salt and pepper, to taste

Directions:


MIX garlic powder, onion powder, mustard powder, salt, pepper, oil, vinegar, sugar and soup in large bowl.

ADD carrots, red onion, green onion and pepper. Mix well.

COVER and refrigerate overnight. Serve cold.

 

I am sorry, I do not know how many this serves.  I just make it and keep it in my refrigerator and eat it until its gone.


    Prep Time:   5 minutes            Chill Time: 45 minutes
    Bake Time: 45 minutes                           Serves: 6
