Garden Pasta Medley
1 (8 oz.) pkg. sm. shell pasta
1 c. broccoli flowerets
3/4 c. sliced yellow squash
1/2 c. chopped sweet red pepper
1/2 c. thinly sliced radishes
1/4 c. chopped celery
2 tbsp. chopped fresh parsley
4 oz. Cheddar cheese, cubed
1 (8 oz.) bottle commercial creamy cucumber salad dressing
Lettuce leaves
Fresh parsley sprigs (opt.)
Radishes (opt.)
Cook pasta according to pkg. directions, drain. Rinse w/cold water, drain. Combine pasta & next 8 ingredients, tossing well, chill. Serve on lettuce leaves. If desired, garnish w/parsley & radishes.
6 to 8 servings.
