Mexican Oven Fried Chicken
3 lbs. broiler fryer, skinned & cut into serving size pieces
1 1/2 c. Bloody Mary mix
1/2 c. crushed corn flakes
1/2 tsp. dried oregano leaves
1/2 tsp. ground cumin
1/2 tsp. chili powder
1/2 tsp. paprika
1/4 tsp. onion salt
1/8 tsp. garlic powder
Vegetable cooking spray
Combine chicken & Bloody Mary mix in a lg. bowl, cover & refrigerate 6 hrs. or overnight. Combine next 7 ingredients. Drain chicken & dredge in mixture. Arrange in jellyroll pan coated w/cooking spray. Bake at 350 F. for 50-60 mins.
