Country Eggs
1/4 c. finely chopped onion
1/4 c. finely chopped green pepper
1 tbsp. butter or margarine, melted
6 eggs
1/4 c. milk
1/4 tsp. salt
1/4 tsp. pepper
1/2 c. (2 oz.) shredded Cheddar cheese
Saute' onion & green pepper in butter in a lg. skillet until tender. Combine eggs, milk, salt & pepper, mix well. Pour egg mixture into hot skillet & cook slowly, stirring frequently. Remove from heat. Sprinkle w/cheese, cover & let stand about 1 min. before serving.
