Hawaiian Baked Fish
 
1 1/2 c. pkged. precooked rice
1 lb. fresh (or thawed frozen) flounder fillets, or other mild flavored fish such as turbot or monkfish
2 tbsp. margarine
1 tbsp. instant minced onion
1 tbsp. pimiento, diced
1 tsp. salt
1 tsp. parsley flakes
1/2 tsp. curry powder (opt.)
1 1/4 c. pineapple juice
2 tbsp. fresh lemon juice
3 packets Equal
 
Preheat oven to 325 F. Cook rice according to pkg. directions & place in ovenproof serving dish. Place fish in baking dish, dot w/margarine. Bake 25 mins., remove fish w/spatula & place over rice. Keep warm in low oven while preparing sauce. Combine minced onion, pimiento, salt, parsley, curry powder, pinapple juice & lemon juice in saucepan, cover & heat to boiling. Remove from heat, stir in Equal. Spoon sauce over fish & rice.
