 Moon Cake
  • 1 cup water
  • 1 cup flour
  • 2-1/2 cups cold milk
  • 1 (8-ounce) package cream cheese, softened
  • 1  (8-ounce) carton Cool Whip, thawed
  • 1/2 cup butter
  • 4 eggs
  • 1 large (4.3-ounce) package vanilla instant pudding
  • Chocolate ice cream syrup, chilled
  1. Bring water and butter to a full boil. Reduce  heat and add flour all at once, stirring to form a ball.
  2. Remove from heat; add  eggs, one at a time, beating well. Spread in ungreased
    9 x 13-inch pan.
  3. Bake at 400 degrees F. for 25 to 30 minutes until golden brown (it will come out bumpy and uneven). Cool thoroughly.
  4. Prepare pudding with the milk, according to package directions. Beat in cream cheese at low speed with electric mixer till blended. Spread over base. Cover with Cool Whip and drizzle with chocolate syrup. Refrigerate till serving time.
