SPINACH PIE
Serves 4
1/2 cup rice
3/4 cup water
2 sheets frozen, ready rolled pastry, thawed
1 bunch English spinach or silver beet, washed and
shredded
1/2 cup peanut oil
1 small onion, finely chopped
1 cup tasty cheese
1 slice bacon, chopped
2 eggs , lightly beaten
1 tablespoon milk
Place rice and water in a small saucepan over high heat. Bring
to the boil
then simmer, covered, for 7 minutes. { rice should be half
cook ].
Preheat oven to 220C. Line a 9 inch pie dish with 1 sheet of
pastry.
Combine rice, spinach, oil, onion, cheese, bacon and eggs. Mix
well.
Season with salt and pepper.
Spoon mixture into pie plate. Brush edges of pastry lightly
with water.
Top with remaining pastry. Press edges of pastry
together.
Brush the pastry top with milk. Bake for 18 to 20 minutes or
until
pastry is golden and crisp.
Serve hot or cold.
