SPINACH PIE
  • 1 x 250g [ 8 3/4 oz ] packet frozen spinach, thawed.
  • 1/3 cup plain flour
  • 1 1/2 cups skim milk
  • 3 eggs, lightly beaten
  • 4 spring onions, sliced
  • 1x 130g [ 4oz ] can corn  kernels, drained.
  • 1/2 cup grated parmesan cheese
  • Salt and pepper to taste
  • Fresh herbs to garnish.
  1. Lightly grease a shallow, 23 cm [ 9 inch ] flan dish.
  2. Squeeze excess moisture from spinach.
  3. Blend flour with milk in a bowl, add eggs; beat well. Stir in spinach, spring onions, corn and cheese. Season with salt and pepper. Pour into prepared dish.
  4. Cook in a moderately slow oven, 160 degrees C, (325 degrees F.) for about an hour or until set. Serve pie warm or cold with a salad; garnish with fresh herbs.

SPINACH PIE
Serves 4
 
1/2 cup rice
3/4 cup water
2 sheets frozen, ready rolled pastry, thawed
1 bunch English spinach or silver beet, washed and shredded
1/2 cup peanut oil
1 small onion, finely chopped
1 cup tasty cheese
1 slice bacon, chopped
2 eggs , lightly beaten
1 tablespoon milk
 
Place rice and water in a small saucepan over high heat. Bring to the boil
then simmer, covered, for 7 minutes. { rice should be half cook ].
Preheat oven to 220C. Line a 9 inch pie dish with 1 sheet of pastry.
Combine rice, spinach, oil, onion, cheese, bacon and eggs. Mix well.
Season with salt and pepper.
Spoon mixture into pie plate. Brush edges of pastry lightly with water.
Top with remaining pastry. Press edges of pastry together.
Brush the pastry top with milk. Bake for 18 to 20 minutes or until
pastry is golden and crisp.
Serve hot or cold.
