Straining Stock

To strain homemade stock, line a large colander or sieve with 2 layers of 100% cotton cheesecloth. Set colander in a large heatproof bowl; carefully pour broth mixture into the lined colander. Empty strainer to large platter or broiler pan as this fills. Strain twice or as many times as you wish, changing cheesecloth as necessary. (Personally, I strain everything once or twice in a large clean strainer, and then I continue with the cheesecloth.
