Meal's at Di's Diner:
Monday:
1/2 pound hamb.
1/2 small onion
1 bag frozen french style green beans, semi thawed
1 can cream of mushroom soup
1 box wild rice and mushroom rice-a-roni thingy.

In baking pan.
Use on big enough to hold everything because it all goes in one pan..
All DONE IN OVEN..

Bake/FRY/BROWN hamburger, just like you would on top of the stove..
Break it up and move it around.
With the onion.
I left mine whole, you can dice it or add more and different spices.. I added pepper and a dash of garlic powder.

Add to this.
No I didn't drain the hamburger, it was 93%. If you need to, Drain the meat before adding the rest.
Semi thawed veggies, any veggies will work..
Semi thawed only because I forgot to take them out of the freezer earlier.. Less cook time if thawed...
Although, the ice crystals in the bag added just enough liquid for me..

Stir and allow to bake maybe 10 minutes.

Add rice and rice flavor packet. Stir well making sure all the goodness off the baking pan is included..

Add soup and at least 3 CANS of milk. You don't have to use milk, water will work also..
Return to oven and finish baking.
Your choice of oven temp. Turn it up to brown meat or brown it slow.
Final baking time should be about 45 minutes..
Total will depend upon your choice of oven temp.

I use the oven browning alot as I can put it in and come back to it in 15 minutes. I don't have to stand there and watch and stir, nor do I have the GREASE MESS PLUS ANOTHER PAN TO WASH.

Glen's lunch :
Glen makes this himself so I'm not really sure what he does..
1 can well drained tuna
Some pickles, chopped, the rest of the onion, some pepper and salt
Mayo enough for Glen.
This will make enough tuna mixture for at least 4 sandwiches.
Hannah made some sugar cookies.
He takes a single serving chips, and 2 single servings fruits.
I could save money buy buying large cans of fruit.. AND CHIPS..
Hmm.. It's just easier this way.
I know, I know.. Little Debbies or whatever I can find on sale.. I could bake him somthing really nice..
OKAY.. MAYBE WHEN I RETIRE..
And, Like I said.. He'd love to eat any noodle salad I'd get my rear in gear and make..

I ate:
In baking dish large enough to hold this:
1/2 can tomatoes with chilies
1/4 bag cut green beans, frozen
1 can Healthy select veggie beaf soup
A dash of garlic powder, some dried onion ; just because I'm lazy!
Enough water to cover
Baked until reduced; uncovered and stirred every now and again. Depending upon oven temp and my time schedules.
Rushed if I'm late, baked longer if I'm in the house.
5 minutes before Add to oven, thick cut dark dry bread, brushed with oilve oil and a sprinkling of garlic powder.

Sit down and watch CNN!!

Glen and Hannah will make popcorn almost every night as a treat, and only one small bowl of ice cream every other night..
Glen makes some great cheese, taco, and sugared popcorns..

I'll add Tuesday:

2 pound beef roast
About 1 pound of cut up carrots, fresh ones. You could use frozen also. Normally, I would use a bag of frozen carrotts.
Canned ones work also, drain to remove the salt..
(These are getting old in fridge.. NOW IS THE TIME OR THEY BECOME A SOUP OFFERING.)
One whole onion. You can dice it if you wish. Glen likes the big pieces of onion. Hannah will not touch them!
As many cleaned baked potatoes that will fit either in the oven or baking dish.
Tonight will be in the baking dish. All smaller potatoes.

Oven browning for roast.
Baking pan large enough to hold everything.
A bit of your style grease for browning roast.
Melt in oven
Add roast and brown, turning as you need
Your choice, to cover or not. I use my cover.

Remove fats if you want.. I don't.
Remove meat and deglaze pan with your choice of liquid.
This means... Adding some liquid to the gumk on the bottom of the baking dish. Stir all that goodness off...
I'll use simple water.

Add to baking dish
Return meat to middle of pan
I'll add 1 cup shredded cabbage
Carrotts and cleaned skin on small potatoes.
Layer around the roast in that order.

Again, your choice of liquids. And amounts.
The bigger the roaster, the more veggies. Plan for 1/4 pound meat per person. We do not need more than that if we have all the wonderful extra's...Even if we don't..
JUST 1/4 POUND MEAT IS ENOUGH PER MEAL FOR ANYONE.
And, if you are planning for another meal..
TAKE THE MEAT OUT OF THE ROASTER AND REMOVE YOUR NEEDS BEFORE PUTTING THE MEAL ON THE TABLE.
They cannot eat it if it's not on the table...

If you know how to make a great gravy, the liquids will make a wonderful gravy.
If not.. The liquids will create a wonderful dipping for it all.
Save all broths for hotdish liquids...

My liquids are at least 2 tablespoons prepared, not creamy, horseradish
Enough beef broth, from my freezer. If I didn't have this, I'd use water.
No salt. A sprinkling of garlic powder.
2 tablespoons pepper. Just our choice for this dish. Much less for your choices.
Enough to cover it all.

Baked until meat and veggies are tender.

I will not make a gravy. I want the broth for a soup meal coming up.
They will enjoy a juices on the side and save everything they do not eat. 2 pounds of a beef roast is alot of meat for only 2 people to eat at one meal.
They should have a good 1 pound leftover. This will become a babr'q beef sandwich meal for the two of them.
These leftovers will become a great chili bean/barbq's/ biscuit meal.
The extra veggies will become a meal for me!!!

So, Your beef roast weighing 5-6 pounds should be able to create at least 2-3 meals for you if you plan for it..
Even if you buy just 2-3 potatoes at a time..

TAKE THE MEAT OFF AND KEEP IT AWAY FROM THE TABLE!

He made this also so again, I'm not real sure how he did it all.
Some hot dogs, pickles, and onion
Chopped up and enough mayo for Glen.
This also will create enough for at least 4 sandwiches.
If he'd have used the entire bag of 8 JUMBO hot dogs..
WELL, WE'D HAVE ENOUGH FOR CONFIRMATION!
HMM, NOW THAT'S AN IDEA..

This certainly could become a meal for at least if adding more liquids and baking it all down or stove top a family of 4 when adding more veggies..
Add a nice bread or toast, and you'll have a meal.

I usually don't eat all of this, I save it for a soup meal each week for family.
Yet, If you're a thick soup kind of person.. Remember the can of soup has almost 3 serving. Do the math for the SALT!!

Well, I suppose the 80 hot dogs left over from last night's church meal might not go over well..
However.....
I did bring them home and put them in smaller bags for different days..

Tonight's meal is the leftover beef roast.
Just enough for about 3 servings of barb'q beef sandwishes.
On, hot dog buns, though..

Beef leftover's shredded with a fork.
Add to baking dish.
They were going to throw out the maybe 1 cup of chili last night.
I had told Donna, I would take home any leftover chili even if it was just a small dish..
So...
The chili mixed in with this.
Add bottled barb'q sauce.
Put in oven and bake down.
This can be done on top of the stove and in the mircowave also.

We had 4 boxes of chips leftover. I only bring home the opened bags no one else wants to take home.
The other boxes will keep just fine for another use.

I'll add a couple of other ideas for the leftover beef roast.

Beef pies.
Using small pie dishes. I bought some pot pies on sale and saved the dishes.
1/4 circle of any store bought pie crust for each pie.
I use only one crust for mine. You could layer the dish with a crust and top with more crust if you'd like.
To a mixing bowl:
ADD
Your choice, either shredded beef or diced beef.
This works for chicken, pork, and meatloaf's, cut up meatballs also.
Or, all veggie with a gravy works also.
If you have some leftover gravy, use this. If not. I would use any good tasting store bought gravy.
Or, a small amount of a cream soup. Gravy is better.
Any leftover veggies.
If making alot for freezer meals and using fresh/ frozen. or canned veggies, cook and drain well your choice. No need for potatoes, the crust has enough stratch. Yet, you could add some small diced.

Remember this all goes into a small dish..
You can make this all in a larger pie pan, deep dish pizza pan, or baking dish with whole crusts as topping.

Add to baking dish.
Meat mixture to fill dish just below the 3/4's line.
Cover with pie crust and seal if desired. I sometime do and sometimes don't. Cut a small vent hole in crust and bake in a slower oven until heated through and crust is golden.

If using a cream soup. Do not add any liquid for soup.
Just a little goes a long way with the cream soups.

Shredded beef and gravy
Just what it sounds like.
Gravy and beef over toast, rice, potatoes or veggies.

Pocket bread beef
After creating you choice of beef mixture.
Either barb'q, or a light slash of gravy, some nice crunchy veggies.
Add to pockt bread and wrap in foil. Bake until heated through.
Or heat the meat mixture and add to pocket bread.

Pie crust turnovers
-------------
1/2 circle any store bought or home made pie crust
In middle of this add your choice of meat mixture, with less liquids added.
Just a small amount.
Cover with remaining crust for your circle and seal.
Bake seal down until golden. A small vent hole on top might help.

Taco or any mexican meals can be used the same way with this recipe.
Use the beef adding some taco sauce and refried beans.
Use a can of chili and beans for this all also.

Beef stews and soups.

You can use the beef as hamburger with a Hamb helper meal idea also.
