DI'S KITCHEN : Di's Diner for the past two weeks.....

Meal's at Di's Diner...
I haven't taken the time to get to my house meals.
Just toooooo much going on to post them all.
I did have everything planned out though.

Knowing the past 2 weeks would be busy, I had alot of meal ingredients in the freezer.
Ready for either just the noodles or frozen potatoes.. Or, make a toast..
-------------
I had made the beef and pork roast in the same pan and saved almost all of both meats.
Cubed some along with some gravy juices
Sliced some along with gravy juices
Shredded some for barb'q meals or a pot pie thingy

I also made up 10 pounds of hamburger into meatloaf or meatballs.
About half hamburger for each.
Just enough in freezer bags for a family meal..

I had made 6 batches peanut butter cookie mix..
Some got spread in a pan with addition of chocolate chips for bars, some in ice cube trays, frozen and popped out for 2 dozen cookies..
I also had 10 batches of chocolate chip cookie recipe. I use the same recipe for M&M cookies and chocolate chips..
I made a pan of each for bars and the rest divided in half for frozen cookies..

So, I had plenty for all the Lenten meal's needs.. You know that pan of bars we all love to eat at a church meal!!
Oh be still my thighs!!!
I mean, it's the desserts we go to a POT-LUCK FOR, ISN'T IT???

So, we ate from the freezer for the starter idea with all the meats..
Since my kitchen is in the living room..
I used up some items that I know are older than others...
Some spanish rice, mushroom rice, chicken rice, beef rice and some of the same idea's with the noodles and sauce stuff..
Added veggies as I wanted..
Everything in the oven..

These next 2 weeks will be the same..

Last night, Tuesday:
I made a nice beef roast, yes a fresh one..
Real potatoes..
I thought Glen was getting tired of all the freezer friendly meals..
Tee hee..
Little does he know.. That beef roast will turn up sometime during these next 2 weeks TWICE!!

Wednesday:
Leftover Easter church ham made up as a hash brown ham quiche thingy..
------------
Thursday, if Eileen does not kill me after our morning meeting..... Tee hee.... I'm sure we'll be able to talk this out if we are alone.
Thursday:
Super early bakery work Friday morning, like before Thursday is over......
Hannah can put the meatloaf in the oven and the potatoe salad will be made really in the day..
Will be potatoe salad.. Freezer meatloaf. Baked carrots

Friday : It's another really early Saturday bakery morning..
Supper must be oven friendly as I'm in bed early.
Leftover meatloaf made into tacos with spices and smashed chili beans.
Glen and Hannah know how to get the shells up and running. There's always cut up lettuce and shredded cheeses in the fridge.

Saturday night:
We'll have the steaks I bought last week. Everyone wanted chicken instead.. Like whatever...

I personally don't care what we eat on Sunday..
It's the only melt down day I can think of I'll have ..
I doubt I'll enjoy that, though..
HURRY UP TRAVIS!!
Somewhere along the line the laundry needs to get done..

Next week?
Well, that just might be a crap shoot!!
I still have alot of freezer friendly starter meats and veggies..
And, Glen and Hannah LIKE SOUP/STEW!! I have alot of different frozen homemade broths I can make a quick soup/stew out of......

I know excatly how many pans of lazanga are in that freezer........
Glen and Hannah better not take one and bake it..
They certainly are allowed, as long as they tell me I need to make one more!
When all else fails.. There will still be some leftover church ham for a nice egg and ham , Glen fry it! meal...
PANCAKES WORKS FOR SUPPER ALSO!!!
I am planning a night of bread pudding to get rid of all this old bread and some ham as a meat..

Glen has enjoyed a day or two of egg salad. I'll mix the last of what I made with some tuna for tomorrow.
Make a ham salad for a couple of days with fresh boiled Easter eggs.. Not fresh boiled... Just not peeled eggs. They keep better in a carton and in the peeling

With the potatoe salad, that should be the end of the EGGS!!!
Good thing Hannah likes hard boiled eggs as a treat!
Travis was eatting one yesterday and said he was sorry..
OH PLEASE, TRAVIS... EAT ANOTHER, HERE ALLOW ME TO PELL IT FOR YOU!!

After April 30th...
I'll get back to life sorta normal..
My kitchen might be put back to together as we still have 4 more sections to get finished...
My life will start to slow down..
Thank the Lord for good freezer bags and a good marker!!
