This week is an oven or crock pot week as I never know how long after school meetings will last..........

Monday:
Meatloaf, twice baked potatoes, baked carrotts.
Meatloaf to my recipe.
Leftover baked potatoes from Sunday, mixed with sour cream and cottage cheese, an egg and TWICE BAKED.
Some cheddar cheese mixed in..

Tuesday:
Lazy Lazanga day.
Leftover pan of lazanga from Confirmation..
Lettuce Salad
-------------
Wednedsay:
Leftover meatloaf, cubed. Mixed with 1 can chili without beans and 1 well drained can chili beans; leftover carrotts.
Mix to make a crust: cooked buttered noodles mixed with 1 egg.
Create crust with noodles in well buttered deep dish pie dish.
Place meat mixture in center, top with shredded cheese if desired.
Bake until heated through.

Thursday:
Lazanga soup.
Leftover lazanga blended in .. HMM WHERE IS THAT BLENDER OF MINE????
My kitchen shelfs have been taken away.. WHERE DID GLEN PUT MY BLENDER??
Mixed with tomato juices, different juice bottles that have been open in the fridge; V8 spicy, V8, Tomato juice; and yes even someone left that little dab will do ya KETCHUP BOTTLE IN THE FRIDGE...
Hmmmm.....................
Green beans as the veggie and if needed, extra onion.
Crock pot for this meal..
Slow cooking!

Friday:
I seldom cook on Friday's.
I'll be out of leftovers from fridge by Friday.
So..
It's ham ends from freezer and a nice chicken pasta/mixed veggie oven baked meal.
Cube ham ends, fry and drain. I save all my ham greases for fryed potatoes...
To baking dish, add prepared to direction on pgk, chicken pasta mixture, thawed mixed veggies.
Bake until heated through..

Saturday..
A HOG ROAST!!!!
A graduation party for one of my sturdents..
I will miss his wife and their 3 boys..

Sunday..
Another graduation party... We will miss our neighbors..
One man will become a teacher and the other a Pastor.
He'll have 4 more years of school...

PLUS, OUR FRIENDS GRADUATION PARTY...
We are planning to be off on the bike dircetly after those Hot Dogs are cooked...
Oh, Let's not forget all those HOT DIGGY DOGGIES I need to cook for the church picinic...
If anyone in this house needs to eat..

Meals at Di's Diner for week May 21 -May 27:

Sunday:
Grilled chicken breasts, green salads, tomatoes, cukes, green peppers, onions, grilled hot dog buns.. (left over from the church picinic.. Tee hee)
Glen and Hannah cooked!

Monday:
3/4 lb hamb browned, drained
1 box Wild Rice and seasonings store bought mixture; like Rice a Roni..
About 1/4 pkg frozen carrotts and 3/4 pkg frozen french style green beans; thawed
1 can cream of mushroom and cream of potato soups.
1 large diced onion or dried to equal.
-----------
1/2 soup can cold coffee mixed with 1/2 teaspoon horseradish
Remaining liquid up to you.
I used water mixed with the good stuff remaining in the soup cans. To equal the rice mixture liquids.
Adding 1/2 can more liquids as I knew this would stand in oven longer than it should.

Mix everything in same baking roaster after oven roasting meat and onions in a splash of cold coffee and beer or water.
----------
Bake 1-2 hours depending upon your families needs and oven temps.

Tuesday:
Chicken stir fry, oven friendly:
3 boneless chicken breasts semi thawed, cubed

In oven ready roaster:
Add: cubed chicken breasts, browning as needed. I use a hot 425 oven for this.
Add a splash of cold coffee and soy sauce to this. A little hot mustard goes great at this point also.

After chicken is browned:
To roaster:
Add: 1 semi thawed stir-fry style frozen veggies, your choice upon which style.
1 pgk or box style SESAME CHICKEN... Or, your choice of chinese flovered rice mixture.
Add your choices of watercress, water chestnuts, bamboo shoots, spouts as your family likes.
Or, leave out the rice mixture and use only the veggies.
Use the rice or plain rice as a side dish.

I will double all the veggies and rice as we are having company for supper tonight.
Plain Rice will on the side for tonight.

I usually don't plan a dessert:

Okay, I have the rhrubarb thawed and the STORE BOUGHT PIE Crust THAWED.....
I'll add just the sugars as needed and make a 2 crust pie!
Serve warm with ICE CREAM

For oven or crock pot/ stove-top:
Mix and add the liquids needed to your recipe or box.
Bake uncovered, stirring every now and again.
Or, make all on top of stove, or in a crock-pot.

Wednesday:
Leftover hot dogs from church picinic
Diced and fryed in chopped peppers and onions.
Layer a buttered deep dish pan with prepared noodles made into a crust with a beaten egg.

Mix fryed hot dog mixture with 1 can Cheddar cheese soup and cooked, well drained green peas.
Layer onto of noodle crust and bake until heated through.
------
Thursday:
A red day:
Store bought spagetti sauce, noodles, and whatever else they want..
Or, chili and beans..
I'll be busy with other things Thursday...
Or, maybe... one of my girls could cook..
Pray for THEIR FATHER....

Friday:
Is a family whatever day.
Very early bakery work.
It's every person for themselves on these long and very early days for me.
I'll get the egg rolls I made last month out of the freezer.
They always like these along with a soup..
Thank goodness for a canned soup every now and again...
There will be leftover's also..

Saturday:
Dianne does not cook after 16 hours at the bakery.
We'll see..

Sunday: I think Glen and I are going away just the 2 of us.
Hannah will eat something with Travis..
Elise is going to meet her boyfriend's PARENTS..
