Meal's at Di's Diner week of May 29- June 3.
--------
It's hot and humid around here.
No OVEN MEALS!
Crock pot days are here AGAIN!!!
---------
Your choice of size of crock pot.
Mine is a 5 quart, adjust your measurments for your size crock.
As you know, I seldom measure stuff, I just add...
------------
Monday:
Spray sides and bottom of crock pot
Add: In layers:
Frozen meatballs to cover, one loose layer. Mine today are store bought.
One pkg french style green beans. Time of cooking depends upon thawed or not. Mine were semi thawed. Undrained.
Any veggies will work
Smaller/ medium cleaned skin on potates, left whole. Enough for a loose layer. Cut into pieces if cooking time will be short.
-------
Mix in bowl:
2 pgk AuJue sauce. Any style you like.
Canned mushrooms, any size you like. I drained these.
As liquid:
A splash of cold coffee, beer. Your choice, beef broth, veggie brith, water, red or white wine, or a mixture of it all... 3-4 cups. ALL dry SPICES YOU LIKE. Soy, Worcheshire, everything!
----
Pour over layers.
Cook either 8 hours on low or 5 hours on high.
-----
Your choice:
Making a gravy or use liquid as a dipping sauce.
Mine is a dipping sauce and extra liquid planned for a leftover meal .
-------------
TUESDAY:
BLT'S
Bacon cooked in Mister George Forman, extra for the salad planned later in the week.
You know the rest..
Fresh watermelon, cantapole, and oranges.
-------------
Wednesday:
Chicken wings in crock pot.
Frozen wings, rinsed and patted dry.
----------
Spray crock:
Add in layers:
Chicken wings enough for your family.
I'll add sliced onion and green peppers, a few ribs of celery
Mix in bowl:
Store bought chili sauce.
Your choice of other spices.
I'll use one small can green chiles, a splash of beer and cold coffee, leftover ketchup mixed with water enough to make thick. (About 1/2 cup ketchup and 1/4 water)
A sliver of sugar.
Pour over the wings
-----
Cook 7 hours low or 4-5 hours high.
Serve with fresh salad and fruits or a cold pasta salad.
---------
Thursday:
Leftover meatballs/ potatoes and veggies.
Prepared egg noddles for a Noodle hotdish, rinsed.
1-2 cans cream of mushroom soup.
Liquid from meatball Monday used as liquid.
------------
Spray crock: Or add to microwaveable bowl:
Mix everything well.
Adding different spices to taste.
More cooked veggies if needed.
-----
Heat through. Crock about 2 hour high
You'll know your times depending upon sizes and what you used as leftover meal.
-----
Serve with any old breads toasted.
----------
Friday:
Egg salad sandwishes
Your favorite recipe
If any cold salad, fruits, salads leftovers..
Well, you know what to do with them..
I'll use a fresh dark rye bread and toast.
--------
Saturday:
Roast pork on the grill
I'm not cooking Saturday..
I'll have the roast ready for the smoker....
We'll see what everyone else MAKES....
-------
Plan extra pork for next week.
Di's Diner is closed.
