How Is Everyone today?

Well today I am running nearly 1 hour late!

I woke about 3:45 and thought..."just 5 minutes more"!...Didn't work out that way...woke again and it was 5:00!!! Jump,shower, grab clothes, oput the door with "The Ladies". Short walk today....and wouldn't ya know it....."Momma" is hurting with her "ritus brother".....so it was sorta a slow go then.....all engines......crawl!...lol

Oh well......"except for the grace of God.......there go I". (& some days....it is me and she is almost pulling me along....hehehe)

Sunday did not go as planned and I didn't make it home until just after 6.....so grabbed a quick wash and took dh out for supper. He was pleased.

We went to Windfields', not too far from us and of course we had their famous rib dinner..he with FF & me with baked 'taters......& he gives me all his veggies.....(he hates squash of any sort, cauliflower,brocculi)...that was the fresh veggies last night. I also had French onion soup with extra cheese!... There are 12 bones in each "rack".......so that gives you an idea of the size of "the spread"! (compare the ;length to the length of your keyboard!.....I would say the measure would be just about as long as to the "right" end of the back-space key!) Good size serving!.....Almost makes me drool just thinking about them again.

We came home, I watch a tint bit of tele........then went to bed.....after answering some customer e-mails!....

Today I have 2 places.......first one is a "pita"......but the house is easy to do!.....lol

Second......likely be no-one there so toss in a couple loads of laundry...after changing the beds...load the dishwasher with the dirties on the counter & stacked in the sink...(which..BTW.....is immediately beside the sink!).....make up the beds....(I "Re & Re" bed linen!)...vac & mop and I'm outta there....

I should be home by 4:40.....

Then what to have for supper?

That brings me to here....

Spaghetti Pie
Metric Ingredient Imperial
170 g spaghetti noodles, cooked according to package directions 6 oz
2 eggs 2
75 ml parmesan cheese, grated 1/3 cup
30 ml butter, softened 2 tbsp
375 ml cottage cheese 1 1/2 cup
15 ml cooking oil 1 tbsp
500 g leen ground beef 1 lb
125 ml onion, chopped 1/2 cup
50 ml green pepper, chopped 1/4 cup
250 ml canned diced tomatoes 1 cup
1 can tomato paste (4 oz / 115 g) 1
5 ml sugar 1 tsp
5 ml salt 1 tsp
1 ml garlic powder 1/4 tsp
250 ml mozzarella cheese, grated 1 cup
Ensuring that pasta is completely drained; add eggs, cheese and butter. Mix together. Pour into glass baking dish (8 in / 20.5 cm) and press down firmly.

Spread cottage cheese over spaghetti crust.

In a large skillet; saute ground beef, onion and green pepper. Add tomatoes, tomato paste, sugar, oregano, salt and garlic powder. Mix together. Pour mixture over cottage cheese.

Bake in preheated 350 F (180 C) oven for 30 minutes. Sprinkle mozzarella cheese over top. Bake an additional 5 to 10 minutes or until cheese is melted.

Serves 4

Savoury Potatoes -
Metric Ingredient Imperial
8 large potatoes, cut in half 8
3 small onions 3
3 package onion soup mix 3
50 ml flour 4 tbsp
- water -
In a large pot with 10 cups (2.5 L) water; add soup mix. Bring to boil and add potatoes and onions. Return to boil, then reduce heat to medium-low heat. Cover and simmer for 1 1/2 hours (watch water level and add more if necessary). Remove potatoes and onions to serving bowl and keep warm.

In a small bowl; whisk together 1/2 cup (125 ml) water with flour. Add to approximately 3 cup (750 ml) broth. Bring to boil and stir until thickened. Pour over potatoes and onions.

Serves 6
