It is quite breezy here this morning......while walking the "ears on the Ladies'......where blowing around....funny to watch.....
 
Result:...they don't like "the wind beneath their ears",.....so the pace was picked up today!....lol

Well...here we all are again this morning!
 
How was your "long" weekend?
 
Hope the weather held for you?
 
If you have read the previous posts to catch up......then you know mine was "active".....lol
 
Never made it home last night.......until after 6:30.......again!
(this working for a living sucks!)
 
First call had some issues......again.......and was running nearly an hour behind....when I left there......(not a good sign)
 
Thought second would be a "breeze"......but the "Mr." was home and had some "chores" he wanted done.......so there-in lies the time!
 
Oh well....they are all "tickey-poo" now........for another 2 weeks!....lol
 
Today I start in Markham and then finish back over by Toronto airport at the place I cleaned on Saturday.
 
I sure do cover the road,.....& while I am at it.......I keep the gas companies in business.
 
Just heard them saying some gas stations' prices range this morning per litre....from $128.7 to $129.9
 
That indicates to me that I should be forking over pretty close to $1.40 per litre...(premium fuel)!
 
 
Awwwwww! the pain of it all......lol
 
Gotta eat........and the only way to earn the money to buy the grub is be where the money is!
 
Only way to be where the money is........is to drive there!
 
Okay!.....time to pick up my marbles and move on!.....
for today anyway.

Scalloped Potatoes And Corn.......
4 medium potatoes - diced
1 #2 can cream style corn
1/8 teaspoon pepper
1 c. milk
1 teaspoon salt
1/4 teaspoon paprika
Instructions

Butter baking dish, place a layer of diced potatoes, then a layer of corn. 

Sprinkle with salt, pepper, and paprika.

Repeat layers until all ingredients have been used.

Pour milk over top and place in medium (350 degree) oven.

Bake 1 hour our until potatoes are done.

Makes 6 servings.

Apricot Lemon Chicken..........
4 (3 ounce) chicken breasts (skinless and boneless)
1 cup water packed apricots
2 tablespoons Dijon Mustard
3 tablespoons lemon juice
Instructions

Place chicken in baking pan or casserole dish.

In blender, blend apricots until smooth.

Add mustard and lemon juice.

Pour over chicken and bake at 350 degrees for 40 minutes.

Baste and bake uncovered for 10 minutes more.

Makes 4 servings.

Rhubarb cake with coconut topping......
1-1/4 cup brown sugar
1/2 cup shortening
1 egg
2 cups flour
12 tsp salt
2 tsp vanilla
1 cup milk
5 cups rhubarb

Topping
1/2 cup sugar
1 tsp cinnamon
1/2 pkg coconut

Mix topping ingredients together.
Sprinkle on top.
Bake at 350 deg. F for one hour.
Top will darken.

Peanut Butter Muffins.........
1 1/2 Cups of whole wheat flour 1/4 cup oat bran
1/2 cup sugar
1 tablespoon baking powder
1/3 cup chocolate chips
3/4 cup milk
1/2 cup peanut butter
1/4 cup applesauce
1 egg white
Instructions

Combine all dry ingredients (including chocolate. in a seperate bowl, combine remaining 4 ingredients-mix until the peanut butter is well incorporated in mixture add liquid to dry mixture-stir until blended but don't over stir -

Bake at 400 degrees for 15-18 min.

Cool on racks.

Yield: 12 muffins
