Good Morning on This Last Day of May... Saturday Greetings! Wakey...Wakey! Thought for the Day:...... What most families need are fewer rules and more good examples.

Get outta bed you bunch of lay-ins!...lol I see ya out there...do ya see me?......lol Nice walk this morning...saw 2 paper guys and one pup! Everything smelled soooooo "clean" this morning. We had a thunderstorm last night...(this one clap of thunder woke me up)...and we sure needed the rain. Anyway...it sure washed the dust off everything out there. What are you doing today? Mowing grass, planting flowers, grocery shopping, laundry...OR just relaxing? As I said the other day...I have 1 -6-hour call today & IF I feel up to it...I might go and do another call call "just up the street and around the corner" from where I will be starting at 8:00 a.m. this morning. We'll see..... Yesterday...I was home by 4:30...the earliest all week! No-one was home at either place...(except the 2 cats & the dog at the second place),...so I breezed through both of them. The dog and cats alway meet me at the door...they know I "have treats"...even the cats are wise to it!...lol The dog is generally "first in line and then the cats "stagger-sit" behind him.....lol. Funny to see...& the cats have that look on their face like..."we can't let her know we are excited to see her...she might get the hint we only want the treats and then stop bringing them"!.......hehehehe Maybe one week I should leave the treats in the car and come in empty-handed?...just to see what their reaction is... Anyway for this week...they are happy and so am I... Recently...I have quite disallusioned(sp) with "humanity"...I think I will stick to the "4-legged, butt-sniffing people" in my life! At least some days they show you a honest perspective of life, with no sugar-coated-out-of-the-side-of-the mouth-speak-with-forked-tongue brown sugar!!!! Carol/CSW/cas * * * * * * * Cinnamon Pudding Cake....... 1-3/4 Cup. packed brown sugar 2 Tbsp. butter 2 tsp. baking powder 2 -1/2 tsp. cinnamon 1 Cup. sugar 1 -1/2 Cup. cold water 2 Cups. sifted flour 1/2 tsp. salt 2 Tbsp. butter 1 Cup. milk 1/2 Cup. nuts (optional)
Combine brown sugar, cold water, 2 Tbsp. butter in saucepan. Bring to a boil. Cool. Sift flour, baking powder, salt, and cinnamon. Cream the rest of butter with flour mixture; add milk slowly. Spread in a 9'x9' pan. Pour brown sugar mixture over batter, and sprinkle with chopped nuts. Bake at 350 degrees for 35-40 minutes. Serve warm with whipped cream.
* * * * * * * Strawberry Pizza..... CRUST: 1-1/2 c. flour 1 c. butter or margarine 1/4 c. brown sugar 1/2 c. chopped pecans
FILLING: 1 pkg. (8 oz.) cream cheese 3/4 c. confectioners' sugar 1 container (8 oz.) whipped topping
TOPPING: 1 pkg.(3 oz.) strawberry gelatin 1/2 c. sugar dash of salt 1c. water, divided 4 T. cornstarch 4 c. sliced strawberries
To make crust, mix all ingredients to form dough. Spread in pizza pan. Bake at 400 degrees for 15 minutes. For filling, mix cream cheese and confectioners' sugar; fold in whipped topping. Spread over cooled crust. To make topping, combine gelatin, sugar, salt, and 1/2 cup water. Dissolve cornstarch in remaining water; stir into gelatin mixture. Cook over medium heat until thickened. Stir in strawberries to coat all slices; cool. Spread on top of filling. Chill pizza. Makes 12 servings. * * * * * * * * * * * * Pepperoni Dip..... This is another one of my favorites to bring to a party.
8 oz. cream cheese--melted 1 can cream of celery soup 1 package pepperoni 1 loaf of French or Italian bread, sliced
Put cream cheese and soup in small crock pot. Mix well.. Cut pepperoni into fourths/quarters. Mix into crock pot. Serve warm with bread slices. * * * * * * * * * * * * * Strawberry Omelet..... 1/2 cup liquid Honey, divided 1 cup milk 6 eggs, slightly beaten 3/4 cup flour 1/4 cup margarine, melted 1 tsp almond flavoring 1/2 tsp salt 2 cups strawberries 1/4 cup strawberry jam
Preheat oven to 350 degrees. Beat together 1/4 cup honey, milk, eggs, flour, margarine, almond flavoring and salt. Pour mixture into a 9-inch deep dish pie pan that has been sprayed with nonstick coating. Bake for 25 to 35 minutes or until puffy and done in the middle. Hull and slice strawberries. Mix with remaining honey and jam. Pour into center of warm omelet. Cut into 8 wedges and serve. * * * * * * * * * * * * Buttermilk Chicken....... 4 chicken breasts 1 1/2 cup buttermilk, divided 3/4 cup flour 1/2 t. salt 1/4 t. pepper 1/4 cup butter 1 can cream of chicken soup
Combine flour, salt and pepper in plastic bag. Melt butter in a baking pan. Dip chicken into 1/2 cup buttermilk. Drop in flour, salt and pepper mixture and shake gently to coat chicken. Put chicken in butter in baking pan. Bake uncovered at 425° for 30 minutes. Turn and bake 15 minutes more. Turn breasts again. Mix together 1 cup buttermilk and cream of chicken soup; pour over chicken. Bake 15 minutes more. * * * * * * * * * Bon Apetitte!
