 I'm Home today!

Yipeeeee!

I can't get too excited tho....laundry needs doing(been 3 weeks!)...that will take all day,...well 'most all day...right after I get back from going to the bank...so I can come back & pay my rent!...

The "Ladies" sure had their legs crossed this morning.....I never crawled out untiol nearly 8:00 a.m.!

Just about 4 hours later than normal.

One good thing about it tho...they sure don't "dilly-dally", ...when ya are this late!

I just heard them saying on the radio this Wednesday, June 4th. that Tim Hortons' is donating every penny from every coffee sold to the kids! They help the under privileged kids,... with them going to camps...& I think some other activities too.

I don't like their products...coffee included...BUT I will go in and add "some money" to the pot!

Yesterday was a good day!

I went and cleaned the place I dropped on Sat. and then went down to "Mrs. Cheapies",...to get started on priming the out-door furniture.

She had not gotten me the sandpaper I asked for....so I had to go to the store and get it. I went where she had bought the other materials! "Collin" told me...he had told her she needed sandpaper!...He also told me that he had been in the paint business for 38 years and "she knew more than him" when it came to paint product!

He agreed with me....it should be painted with Tremclad!!!!

She had not told him that the original coat had been covered with a "plastic-like" finish for outdoor use.

Tremclad is/was the only way to go at this point.

He also said that he would NOT of sold her the product he did had she been forth-right with him....about the origianl base coat!

Anyway...he knows now....& said IF she comes back next year...saying it has peeled....he will ask to see the furniture...that way...it lets me off the hook for "squealing" on her...lol!

Apparently there is a warranty on the paint she purchased this year...along with the primer!

Anyway...I did the "clean call" in 3 hours,(4-pay, no one home and they hadn't been there much and weren't there yesterday to hold me up),...and also raked up from 11:30 to 4 at "Her" place! I only got the 2 chairs and one table primed...still have a 4-seater "sofa" to prime. I also had to sand everything she had wire-brushed and also wire-brushed the "sofa" over again. There were spots where the "last painter had let the paint pool and then drip...had to clean that off. Wasn't leaving anything to chance with her...she is the type that woulda blamed me "for the drips"! I also told her at the start of yesterday that I would NOT do the work IF I didn't sand the finish over & above the wire-brushing...'cause I said IF it starts to peel...I know you will blame me for "inferior work"...She just stood and said "okay, if that's what you want to do...do it"..(she knew I was doing it right). I mentioned my comments to "Collin" and he said I was doing it the proper way!!!!! He also told me that to have that done by a handyman in that area...would start @minimum $35-40 per hour because it is so tedious. Guess I ain't hurin' her too bad @ $20 per hour, eh? I could of gone back today and primed the sofa...BUT 2 days of her in one week is just about all I can handle!...lol

Besides....I have that laundry to get done!

I have a very "full agenda" the rest of this week.

Right through for at least 3 weeks actually!

dh is cleaning windows in this building today...he has a few clients of his own...helps add to his "pocket money". Being on disability...it helps him feel needed. Time-wise...I don't think he makes a descent wage BUT he is thorough to a fault and does a very good job.

On that note...I think it is time for me to say...

Caesar Red Coleslaw.......

3 cups red cabbage, coarsely chopped
1 cup carrot, coarsely grated
1/2 cup green onions, chopped

Dressing
1/2 cup mayonnaise
1/4 cup parmesan cheese
2 tablespoons lemon juice
2 tablespoons Dijon mustard
2 cloves garlic, minced
1/2 teaspoon salt
1/2 teaspoon Worcestershire sauce
1/2 teaspoon Tabasco
1/2 teaspoon black pepper

Combine salt and garlic together to form a paste.

Add to other
dressing ingredients and mix well.

In a large bowl combine cabbage,
carrots and green onions with the dressing.

Toss until completely
coated.

Cover and refrigerate for 2 hours.

Serve cold.

Rodeo Hash......
1 lb ground beef
3 cups diced raw potatoes
1 cup sliced celery
2 T shortening
1 can Campbell's Golden Mushroom Soup
½ cup water
¼ cup chili sauce
1/2 tsp salt
Generous dash of pepper
In a skillet, brown beef in shortening with potatoes and celery; stir to separate meat.

Pour off fat.

Add remaining ingredients.

Cover and simmer 10 minutes, stirring often. (Might take a bit longer, depending on how "small" you dice the 'taters!)

Makes 4 ½ cups.
Note: I would brown the meat with no shortening added.

Banana Oat Breakfast Cookies.....
This is a nice size cookie, should be your breakfast about 230 calories

20 minutes Prep.
14 minutes per batch
12 Servings

1 large banana, mashed ( 1/2 cup)
1/2 cup chunky natural peanut butter (reg.chunky ok)
1/2 cup honey
1 tsp. vanilla
1 cup regular rolled oats
1/2 whole wheat flour
1/4 cup not-fat dry milk product
2 tsp. ground cinnamon
1/4 tsp. baking soda
1 cup dried cranberries or raisins

Preheat oven to 350'F.

Lightly coat two cookie sheets with cooking spray set aside, to a large bowl stir together banana, peanut butter, honey and vanilla. I

n small bowl combine oats, flour , milk powder, cinnamon, and baking soda,

Stir the oat mixture into the banana mixture until combined.

Stir in dried cranberries.

Using a 1/4 cup measure, drop mounds of dough 3 inches apart, flatten cookie on sheet..

Bake one sheet at a time, 14 - 15 minutes or until brown.

Sun Dried Chicken Penne.....
1 lb penne
1 jar sun dried tomatoes packed in oil-drain and use oil for cooking this
1 T roasted garlic
2 grilled chicken breasts
1 red bell pepper-julienned
1 red onion-julienned
8 oz sliced fresh mushrooms
1 c parmesan cheese
1 c Romano cheese
1 pint heavy whipping cream
1 T oil from tomatoes (save remainder in fridge for other uses)
Cook pasta as directed for al dente and drain. Meanwhile, saute mushrooms, onion, pepper, chicken, garlic, tomatoes in oil from tomatoes until all are soft and well blended.

Heat cream to a boil, add cheese to cream and stir until thick-add chicken ingredients into cream.

Pour pasta on serving tray, dress with cream sauce. Serve with a salad and breadsticks.

Beef Short Ribs....
1/4-cup oil
1-1/2-cups self rising flour
2-tspn Lawrey's Seasoned Salt
1-tspn black pepper
5-6-lbs boneless beef short ribs (or country style ribs)
2-cups water
1 onion, chopped
(I use my big deep black iron skillet to make this is)

Heat the oil in a Dutch oven on medium high heat.

Mix the flour, salt, and pepper together.

Coat the ribs with the flour mixture, then place them in the hot oil and brown on all sides.

When all are brown, drain the oil.

Add the water and onions to the Dutch oven, cover tightly, reduce the heat to medium, and let the ribs cook for 2 hours or until tender.

Serve on rice.

Yogurt Coffee Cake Muffins...

FILLING:
1/4 c. brown sugar
1/2 c. cinnamon
1/4 c. chopped pecans or walnuts

Mix thoroughly ingredients for filling.

BATTER:
1/2 c. butter
1/2 c. sugar
2 eggs
1 c. plain yogurt
1/4 tsp. salt
1 tsp. vanilla
2 c. flour
1 tsp. baking powder
1 tsp. baking soda

Cream butter, sugar.

Beat in eggs, yogurt and vanilla.

Mix dry ingredients and add.
Spoon 1 tablespoon batter into each greased or lined muffin cup.

Sprinkle with one teaspoon filling.

Top with batter and sprinkle each muffin with filling.
Bake 20 - 25 minutes at 375 degrees.

Yields: 12 muffins.

Here is a sweetened condensed milk substitute that diabetics could use. Here's mine:

Sweetened Condensed Milk Substitute....
1 cup plus 2 Tbsp. powdered dry milk
1/2 cup water
3/4 cup Splenda

Heat water to boiling and stir in Splenda until it dissolves; stir in powdered milk.

Put in fridge until it thickens.

Works great for me.

ORANGE SMOOTHIES....
1 c. orange juice, other flavor will do
1/2 c. yogurt, plain or vanilla
1 banana

Combine ingredients in a blender. Blend until smooth. Serve.

BLACKBERRY SMOOTHIE....
1 c. cold milk
1/2 c. fresh or frozen blackberries
1-3 tbsp. sugar
Ice cubes

Place in blender, cover, start on puree speed then push blend speed until smooth and ice is dissolved.
