 Feel a little "jungle-ly" this morning!..lol

Dontcha think every once in awhile...ya just gotta "let it all hang...wild-like"?

Just heard that Kelsey Grammer had a mild heart attack! He was on vacation in Hawaii and also IN the ocean when his heart STOPPED! He is going to be okay. He is 51.

The Ladies & I had a very quiet & VERY slow walk this a.m. "Momma" is sure slowing down......."that time" is creeping up...FAST! I can be such a cold-heart son of a $itch....except when it comes to my animals.....I am sloppy slooooooup in that area. I just know that dh will have to take her on her final car ride............sooner than I want to face it.

Enuff!

Well today it is back to work for me!

I played on here all day long....off & on....right up until 1:00 a.m.!!

Then when I went to bed....I couldn't sleep!

3 hours I had to "nap" and then it was a chore to do that...bet tonight I fall asleep with my head on my dinner plate!..lol

Do you ever have nights like that?

I think I get so stressed on the days when I have to do the laundry,(apartment sized washer and dryer & takes forever)...I just get "wired/hyped-up" and then it takes forever to un-wind!...Okay...diagnosis(sp) done!.lol

Had sorta of an interesting happening yesterday too.....dh took a bag of garbage out and when he came back he said there was a guy sitting in the Lobby with a "clip of shells" for a 30-30 rifle!!!!( I ain't a pro on guns altho I can generally aim & shoot & hit what I want),...but I didn't think 30-30's had clips...Anyway...I scrounged around and came up with another widdle bag of "litter" and headed for the garbage bin...just to get a look!.....Sure enuff......there he was on the bench...bold as life and twice as arrogant(sp) looking! Sure looked like 30-30 ammo to me too!

I came back to the apartment & called the cops! Well they invaded the place!....lol.....the guy had left the lobby tho and had start walking off the property...(they told me later that my description had been so "snap on the money".....they woulda known him anywhere)!..lol..

Anywhooooo,...get this....he was from Florida,(don't know why the cops felt it was relavent(sp) that I needed to know that)....and the dang "clip" was a Belt Buckle !!!! The cops told him that here in Canada we don't "flaunt our ammo"!...lol....(we don't have the right to bear arms here either & some days I am so sorry for that law..lol),...and also they said they told him that IF he may of been seen by a "gang member"...(we all have 'em...don't deny it),...he could of been very "un-healthy" for him!

Cops said he was scared...when he realized the seriousness of his thoughtless action.

Anyway...that happened between the load of dh's white undies and the first load of towels...lol

I never seem to have "dull moments"!

That "happening" seems so hard to follow with anything else..lol

I have 2 places today...one is about 40 minutes from here...and the second is the "new call" I started a couple of Sat.'s ago...remember the really long day?...spent mostly in her kitchen?...and also with the "crap" wash-machine?

Think I better get a move on...and hunt up a few shares for this post.

I just want ya'll to know that...

I wish a great day for everyone....

M&M Cookies.....

1/2 bag of M&M's or chocolate chips ( 6 oz)
1 cup brown sugar
1 cup white sugar
1 cup shortening
2 eggs 2 cups flour
2 cups oatmeal
1 teaspoons vanilla
1 tsp. salt
1 tsp. baking soda
1 tsp. baking powder

Mix sugar and shortening.

Mix in eggs and flavorings.

Add dry ingredients and mix well.

Drop by spoonfuls (I make a 1 inch ball) on greased cookie sheets.

Bake at 350° F. for 12- 15 min. (if dark pan check at 11 minutes).
Makes 4 dozen.

Frozen Fruit Dessert.....

1 pkg. cream cheese, softened
1 carton Cool Whip (8 oz.)
1 can cherry fruit filling (21 oz.)
1 can mandarin oranges, drained (11
oz.)
1 can pineapple chunks, drained (8
1/4 oz.)

Combine Cool Whip and cream cheese.

Gradually add fruit filling, blending well.

Fold orange and pineapple chunks into cherry mixture. Line bottom of 9 x 5 x 3 loaf pan with waxed paper. Pour in cherry mixture and freeze overnight or until firm.

Let stand at room temperature for 10 minutes before serving.

Cut into slices.

Flank Steak (Asian).....
1 flank steak (about 1 & ½ pounds)
4 cloves garlic, minced
1 tablespoon peeled, minced fresh ginger
3 scallions, white part only, sliced
(I used green onions and used some of the green part)

2 to 4 Thai chiles or jalapeno peppers, seeded and minced
3 tablespoons sugar
1/3 cup soy sauce
½ cup lime juice
2 tablespoons sesame oil

Score the flank steak on both sides. Arrange in a nonreactive dish or ziplock bag.

Place the garlic, ginger, scallion whites, chiles, and sugar in a large nonreactive mixing bowl and mash to a paste with the back of a spoon.

Add the soy sauce, lime juice, sesame oil and 3 tablespoon of water and stir or whisk until the sugar is dissolved.

Pour half the marinade over the steak and let marinate for 1 to 2 hours in the refrigerator, coved, turning several times to ensure even marinating.

Save the rest of the marinade for dressing and serve with meat on a salad.

Cheap Steak,(made tasty)....
2 pounds beef boneless top round steak (about 1" thick)
Tequila Marinade
1 cup thick and chunky salsa

Pierce beef with fork several times on both sides.

Make Tequila marinade and place in bag or dish with meat, refrigerate 6 to 24 hours.

Remove from marinade, reserve marinade, grill beef brushing occasionally with marinade, turning meat once.

Cut beef across grain into thin slices and serve with salsa.

Tequila Marinade
1/4 cup fresh lime juice
2 Tablespoons vegetable oil
2 Tablespoons Tequila
1/2 teaspoon salt
1/2 teaspoon ground cumin
1/2 teaspoon cayenne (red pepper)
2 cloves garlic, finely chopped.

Mix all ingredients.

Shoestring Potato Salad....

1 c. grated carrots
1 c. finely chopped celery
2 tbsp. grated onion
1 (7 oz.) can tuna, flaked
1/2 c. salad dressing
1 c. (4 oz.) shoestring potatoes

Mix all ingredients except potatoes and chill thoroughly. Mix potatoes in at the last minute just before serving.

Chicken Almond Salad....

1 lb. chicken meat (cooked and diced)
2 c. diced iceberg lettuce
1 c. diced tomatoes, drained
1 tbsp. blanched sliced almonds
2 c. mayonnaise
1/2 c. sour cream
1 tsp. paprika
1 tsp. basil
1 tsp. lemon juice

Thoroughly blend the mayonnaise, paprika, basil, lemon juice and sour cream.

May be stored in the refrigerator for covered.

Toast almonds in moderate oven (about 250 degrees) on cookie sheet until they are lightly browned, stir occasionally.

Place chicken, lettuce, tomatoes and almonds in a mixing bowl.

Add the seasoned mayonnaise and toss to mix thoroughly.

Frozen Fruit Bars.....

2 c. summer fruit (pineapple, oranges, and strawberries)
1 tsp. sugar (optional) (I use sugar substitute)
1 tsp. lemon juice

Puree fruit in blender, adding a teaspoon or two of water if necessary.

Add sugar (if desired), a lemon juice and blend.

Pour into bar molds or small cups and insert sticks. Freeze until solid.

For most fruit it'll be less than 50 calories a serving. Makes 4 (4 ounce) bars.

Fruit Salad with Dressing.....

Dressing
1/2 c. lemon yogurt
1/4 c. dairy sour cream
2 tsp. brown sugar

Salad
2 c. cantaloupe cubes
2 c. honey dew melon
1 c. raspberries
1/2 c. blueberries or 1 lg. bag of frozen mixed fruit

Serves 8.

Iced Tea......

8 sm. tea bags
4 c. boiling water
9 sprigs mint
1 (6 oz.) can frozen lemonade, according to can
1 (6 oz.) can frozen orange juice, according to can
1 c. sugar

Steep mint and tea in water; then remove tea bags and mint and stir sugar into mixture until dissolved.

Add diluted juices and tea mixture.

Add artificial sweetener if desired and water until diluted to taste.
