How are ya today?
 
I am so much cooler than yesterday!......lol
First call I had to take my shoes & socks off. My feet just ballooned up with the heat! Second place was okay doing the downstairs area.....
BUT WOW!....the upstairs was like a bakery!
I know I complain & some have even commented about no a/c,... no work,(myself included)...BUT I guess for some,... it is comfortable....(I am very grateful that I can say about the majority of my clients....."good thing they are cool Folk"!)...lol...
 
Today is the client that just bought a place in Italy. He will have the a/c on!! Yipppppppeee!
 
The second place WILL NOT!....
OH well!
This is the place with the 2 cats & the dog that line up at the front door for their "treats" when they see me coming.....(you know..the cats with attitude?)
 
What are you up to this Friday the 13th.?
 
Are you superstitious(sp) about this type of thing?
 
My daughter was born on a Friday the 13th.!
 
That was a good "omen"....
 
We have no hot water here in my building this morning..it is NOT stone cold but IS a wee bit uncomfortable for a shower!...
Had no hot water about 8:30 last night and it was repaired then,... BUT guess it became
"un-repaired".....
AGAIN!..
 
Just one of the "joys of multi-family" dwelling!
(apartment living)
 
I think I have about run out of things to yammer on about..so guess it has come to that time to say....

Favorite Lemon Cake

1 (18.25oz.) Betty Crocker Lemon cake mix
1 (14oz.) can condensed sweeten milk
1(3.4oz.) box instant lemon pudding mix
1(8oz.) Cool Whip, thawed

Make cake as directed and bake in 9x13 pan.
Let cool 5 minutes.
Poke holes in cake with chop stick or spoon handle. Pour condensed milk over top of warm cake.
Allow to cool.
Mix instant pudding mix as directed then put on top of cake.
Then cover top of cake with Cool Whip.
Need to refrigerate.

Mix a batch of your favorite cup cakes. Fill about 2/3 full. Then spoon the following filling in. You will not even need to frost if you do not wish.

Cupcakes........

Filling
1 8 ounce package cream cheese
1 egg
1/3 cup sugar
Mix well. Add
1/2 package mini chocolate chips stirring well.

Put about 1 rounded tablespoon into each cup cake.
Bake as normal.
Tastes like you have cheesecake and cake together.

Great Cole Slaw....

3 cups green cabbage, coarsely shredded
1/3 cup bacon, crumbed
5 tablespoons blue cheese, crumbled
½ cup blue cheese crumbled
1/2 cup Marzetti Slaw Dressing
¼ to 1/3 cup cherry tomatoes, cut in half

Combine green cabbage, bacon crumbles, ½ cup blue cheese and add the slaw dressing and toss well.
Chill at least 4 to 6 hours to blend flavors.
When ready to serve garnish with tomatoes and the 5 tablespoons of blue cheese.

Scalloped Corn....
1 beaten egg
1 c milk
1 17 oz can cream style corn
1/4 c chopped onion
3 T chopped pimiento

Combine egg, milk, 1/4 t salt and dash pepper.

Stir in corn, onion and pimiento. Bake uncovered @ 350 for 1 hour or till knife comes out clean.

Serves 6.

Spinach Casserole...
2 10 oz frozen spinach thawed and drained
1 can cream of mushroom soup
1 8 oz brick cream cheese
I can fried onion rings

Blend all the ingredients and 3/4 can of onion rings.

Bake at 350 until hot and bubbly.

Then top with the remaining onion rings.

Zucchinni Relish.....
Makes 5 or 6 pints

10 cups shredded zucchini
4 cups chopped onions
5 tablespoons salt

Mix above ingredients and let stand covered overnight.

Drain and rinse well 2 or 3 times.

Add:
2-1/2½ cups white vinegar
4 bell peppers (chopped)
4 cups sugar

Add:
1 tsp each of:
Dry mustard
Tumeric
Celery seed
Black Pepper

Boil slowly for 30 minutes
Put into hot sterilized jars.

This is the recipe I got from my mother, going to copy it just as she wrote it. Enjoy, this is great!

All Baked In Only One Pan

Chicken, peaches, biscuits, gravy.

Heat oven to 425'f degrees.

Dip cut up chicken in 1/2 cup undiluted evaporated milk, then roll in a mixture of 1 cup Bisquick, 2 tsp salt, 1/4 tsp pepper, 2 tsp paprika.

Melt 1/2 cup shortening in a 13x9x2 pan in the oven.

Add the chicken skin side down.

Bake 50 to 60 min. Meanwhile make Bisquick drop biscuits using undiluted evaporated milk.

Move chicken to one end of the pan.

Drain a large can of peach halves, arrange on the chicken.

Spoon biscuit dough into the other end of the pan.

Bake for 15 minutes more.

Remove food to hot plates.

For gravy, blend 1/4 cup bisquick mixture, saved from dipping, into the pan.

Stir in gradually 1 cup of water, boil and stir 2 minutes.

Stir in 1 cup evaporated milk.

Heat but do not boil. Add salt and pepper to taste.

(Mother always used 1 whole frying chicken cut up. I use butter in the pan instead of shortening and any pieces of chicken will do. Boneless, skinless chicken breast halves do very well here, just cut down the time since they will cook much faster. And the drop biscuit recipe is on the box of Bisquick.)

Our Favorite Chocolate Cake....

2 c all purpose flour
2 c sugar
2/3 c cocoa
1/4 tsp. salt
2 tsp. baking soda
2 tsp. baking powder
2 eggs
2 tsp. vanilla
2/3 c oil
2 c boiling hot water

Sift dry ingredients in a large bowl.

Make a well & add eggs, oil, & vanilla, mix.

Add boiling water gradually & mix.

Bake in greased 9x13 pan at 350 degrees for 30-35 min.

"Go To Church" Chicken......

1 can cream of mushroom soup
1 can cream of celery soup
2 small cans milk
1 package onion soup mix
1 Box Uncle Ben's Wild Rice mix
6 chicken breasts -- up to 8

Blend first five ingredients together and spread over bottom of greased casserole.

Lay chicken breasts on top of rice.

Cover and bake at 350'f degrees for 1&1/2 hours.

Uncover to brown before serving.
