Cake, Irish Jam Cake - 1-3/4 cups all-purpose flour
- 3/4 teaspoon baking powder
- Pinch of salt
- 4 eggs, beaten until thick and lemon-colored
- 1 cup sugar
- 1 teaspoon grated lemon rind
- 1 teaspoon lemon juice
- 1 cup strawberry, raspberry, or fruit jam of your choice
- Powdered sugar for garnish
- Sift together the flour, baking powder, and salt. Beat the sugar into the eggs until the mixture is light and fluffy.
- Fold in the flour mixture, lemon rind, and lemon juice.
- Spread into two 8-inch greased and floured cake pans. Bake in a preheated 350°F. oven for 20 to 25 minutes, until a toothpick inserted in the center comes out clean. Cool slightly before removing from the pans, then cool completely on wire racks.
- Place one cake on a serving plate, spread the jam over the top, and top with the remaining cake. Dust with powdered sugar immediately before serving.
