Cake, Irish Jam Cake


  • 1-3/4 cups all-purpose flour
  • 3/4 teaspoon baking powder
  • Pinch of salt
  • 4 eggs, beaten until thick and lemon-colored
  • 1 cup sugar
  • 1 teaspoon grated lemon rind
  • 1 teaspoon lemon juice
  • 1 cup strawberry, raspberry, or fruit jam of your choice
  • Powdered sugar for garnish  
  1. Sift together the flour, baking powder, and salt.  Beat the sugar into the eggs until the mixture is light and fluffy. 
  2. Fold in the flour mixture, lemon rind, and lemon juice. 
  3. Spread into two 8-inch greased and floured cake pans.  Bake in a preheated 350°F. oven for 20 to 25 minutes, until a toothpick inserted in the center comes out clean.  Cool slightly before removing from the pans, then cool completely on wire racks. 
  4. Place one cake on a serving plate, spread the jam over the top, and top with the remaining cake.  Dust with powdered sugar immediately before serving. 

Serves 6 to 8
