Dessert, Orange Pudding (Chinese) - 1/2 cup pearl tapioca
- 2-1/2 cups water
- 1/4 cup sugar
- 1 large orange, peeled and cut into segments
- Soak the tapioca in 1/2 cup water for 4 to 6 hours.
- Combine the remaining water and sugar in a saucepan and bring to a boil.
- Drain the tapioca and add to the water mixture slowly, stirring constantly. Cook over moderate heat, stirring constantly, until the mixture thickens, 2 to 3 minutes.
- Gently stir in the orange segments and return to the boil .Serve immediately.
