Dessert, Orange Pudding (Chinese)


  • 1/2 cup pearl tapioca
  • 2-1/2 cups water
  • 1/4 cup sugar
  • 1 large orange, peeled and cut into segments   
  1. Soak the tapioca in 1/2 cup water for 4 to 6 hours.
  2. Combine the remaining water and sugar in a saucepan and bring to a boil.
  3. Drain the tapioca and add to the water mixture slowly, stirring constantly. Cook over moderate heat, stirring constantly, until the mixture thickens, 2 to 3 minutes.
  4. Gently stir in the orange segments and return to the boil .Serve immediately.

Serves 4 to 6
